- Cut steak diagonally across grain into thin slices.
- Heat oil in a large nonstick frypan over medium high heat.
- Add steak, saute 3 minutes.
- Sprinkle with salt and pepper, add ginger, garlic and jalapeno, saute 1 minute.
- Add onion, curry and coriander,saute 4 minutes, add tomatoes,and simmer 1 minute or until liquid almost evaporates.
- Remove from heat, and cool slightly.
- Stir in yogurt.
- Serve over rice.
- Garnish with cilantro, if desired.

- Season meat generously with salt and pepper. In a large skillet over medium high heat, heat oil. Add beef and cook, flipping once, until deeply golden, 3 to 5 minutes per side. Transfer to a plate. Add onion to skillet and cook until soft, about 5 minutes. Add garlic, ginger, and spices and cook until fragrant, 1 minute. Add coconut milk and bring to a simmer. Lower heat to low, add beef, and continue to simmer until fork tender, about 1 1/2 hours. Serve with yogurt, naan, and lime wedges.

- In a large bowl, combine 1/2 teaspoon salt, cardamom and allspice. Add beef; turn to coat. In a large skillet, heat oil over medium heat; brown meat in batches. Transfer meat to a 3- or 4-qt. slow cooker. In the same skillet, cook onions until tender, 4-5 minutes. Add ginger, garlic, curry powder, cumin and remaining 1 teaspoon salt; cook 1 minute longer. Transfer to slow cooker., Cook, covered, on low until meat is tender, 4-5 hours. Stir in spinach; cook until heated through, about 30 minutes. Just before serving, stir in yogurt. Serve with rice and, if desired, additional yogurt and red onion.
