This fast-assembled salad, perfect for Thanksgiving leftovers, is nothing more than shredded turkey under a satay-like sauce of peanut butter, chile bean and Chinese vinegar, with some shredded lettuce and chopped cucumbers. It’s gloriously wolfable and easy as well.

3 tablespoons smooth peanut butter
2 tablespoons Chinese chili-bean sauce
1 tablespoon superfine sugar
1 tablespoon soy sauce
1 1/2 tablespoons Chinese black vinegar
6 cups finely shredded lettuce
1/2 cup chopped fresh cilantro leaves
1/2 cup chopped fresh mint leaves
3 cups cold shredded turkey
1 scallion, halved crosswise and julienned
1 small cucumber, peeled, seeded and julienned

This cucumber and onion salad is cool, crunchy, and a bit sweet. It's meant to quench the fire from all the other dishes on the table.

Yield 8 servings

Number Of Ingredients 7

6 Persian cucumbers, thinly sliced
½ small red onion, thinly sliced
1 tsp. kosher salt, plus more
¼ cup unseasoned rice vinegar
2 tsp. sugar
Freshly ground black pepper
Fresh mint leaves (for serving)

Steps:

  • Toss cucumbers, onion, and 1 tsp. salt in a medium bowl. Let sit until cucumbers begin to release liquid. Gently press down on cucumbers to force out more liquid, being careful not to break apart. Remove from bowl, shaking off liquid, and place vegetables in a clean bowl. Toss with vinegar and sugar; season with salt and pepper. Top with mint.

    1. Run a fork down the length of the cucumber until it’s stripy all over.
    2. On a chopping board, use a knife to chop off the ends.
    3. Carefully cut them in half across the middle, then in half lengthways.
    4. Use a teaspoon to gently scoop out and discard the seeds.
    5. Chop the cucumber up into 1cm chunks and place in a mixing bowl.
    6. Place the olives on a chopping board, squash them with the heel of your hand, pull out and discard the stones, then roughly chop them and add them to the bowl.
    7. Trim and finely slice the spring onions and add them to the bowl.
    8. Add the balsamic vinegar and 4 tablespoons of extra virgin olive oil.
    9. Squeeze in the juice of ½ a lemon, using your fingers to catch any pips.
    10. Sprinkle over a pinch of black pepper.
    11. Pick and tear over the mint leaves, toss everything together, then serve.
