How to make Cucumber Curry

Cucumber,Ginger,Garlic,Black peppercorns ,Dried red chillies ,Roasted peanuts ,Oil,Split black gram skinless (dhuli urad dal) ,Onions chopped ,Tomato,Salt,Turmeric powder ,Cumin powder ,Red chilli powder ,Coconut milk ,coriander leaves ,Fresh red chilli slit ,

Steps:

  • Grind ginger, garlic, black peppercorns, dried red chillies and peanuts with a little water to a paste.
  • Heat oil in a non stick pan. Add black gram and saute till they turn a light brown. Quarter cucumbers vertically and cut into big pieces.
  • Add onions to the pan and saute till soft. Chop tomato and add to the pan and saute.
  • Add cucumber, salt and mix well. Add turmeric powder, cumin powder, red chilli powder and saute for 2-3 minutes. Add peanut paste, coconut milk and mix well. Cover and cook on medium heat for 10 minutes.
  • Transfer into a serving bowl, garnish with a fresh coriander sprig and fresh red chilli and serve hot with chapatti.

This is a variation of a cucumber salad I once enjoyed at a salad bar. I use mayonnaise to cut the tartness of the sour cream. It has a rich flavor, too! Reduce calories by using "light" sour cream and mayonnaise.

1/3 cup sour cream
1/2 cup mayonnaise
1/4 to 1/2 teaspoon lemon-pepper seasoning
1/4 to 1/2 teaspoon curry powder
1/4 teaspoon garlic salt
1/2 teaspoon parsley flakes
Hot pepper sauce to taste
3 cucumbers, peeled and thinly sliced
1/2 medium onion, thinly sliced
Salt and pepper to taste
Fresh parsley or minced chives, optional

Steps:

  • In a bowl, combine first seven ingredients. Toss with cucumbers and onion slices. Chill 2-3 hours. , Stir just before serving. Adjust salt and pepper to taste; garnish with parsley if desired.
