CUBANITOS RECIPE -

Appetizer-size grilled pork and cheese sandwiches you just have to taste to believe. Great for snacking anytime.

Total Time 25 minutes

Prep Time 20 minutes

Cook Time 5 minutes

Yield 16 appetizers

Number Of Ingredients 8

2 tablespoons olive oil
2 garlic cloves, minced
4 ciabatta rolls, split
2 tablespoons yellow mustard
8 slices swiss cheese
8 slices dill pickles (lengthwise slices)
8 ounces thinly sliced deli roast pork
8 slices cooked bacon

Steps:

  • In a small bowl, combine the oil and garlic and set aside.
  • Trim tops & bottoms of rolls to make flat surfaces. Brush the outsides with the garlic oil mixture and spread the insides with mustard. Place one cheese slice on each bottom roll then top with pickles. Divide pork evenly among the bottoms and top with bacon and the other 4 cheese slices. Replace tops.
  • Heat a large grill pan or skillet over medium heat. Add sandwiches and weight down with a heavy skillet. Cook 2-3 minutes until toasted, turn and repeat.
  • Cut each sandwich into 4 portions.

2 cloves garlic, minced
4 ciabatta rolls, split
2 tablespoons yellow mustard
8 slices Swiss cheese
8 lengthwise slices sandwich dill pickles
8 ounces thinly sliced deli roast pork
8 slices packaged ready-to-serve cooked bacon, crisped according to package directions

Steps:

  • In a small bowl combine oil and garlic; set aside.
  • Trim tops and bottoms of ciabatta rolls to make flat surfaces. Brush outsides of rolls with oil mixture. Spread insides of rolls with mustard. Place one slice of the cheese on each roll bottom. Top with pickles. Divide pork evenly among roll bottoms; top with bacon and the remaining four cheese slices. Replace roll tops.
  • Heat a large grill pan or skillet over medium heat. Add sandwiches. Weight down with a heavy skillet. Cook 2 to 3 minutes or until bread is toasted. Turn sandwiches over, weight down, and cook 2 to 3 minutes more or until bread is toasted and cheese is melted.
  • Cut each sandwich into four portions.
