This Cuban sandwich is piled high with ham, roast pork loin, Swiss cheese, and dill pickles, then toasted to warm and crunchy perfection.

Chipotle Mayonnaise:
1?½ cups mayonnaise
½ cup sour cream
¼ cup chopped fresh cilantro
¼ cup diced green onions
1?½ tablespoons ground chipotle peppers
1 tablespoon lime juice
1 tablespoon garlic basil spread (see footnote for recipe link)
1 teaspoon ground cumin
salt and ground black pepper to taste
Fillings:
2 tablespoons olive oil
2 sweet onions, sliced
1 teaspoon red pepper flakes
1 teaspoon dried oregano
2 jalapeno peppers cut into rings, divided
4 ciabatta sandwich rolls, sliced horizontally
¼ cup sweet hot mustard, divided
½ pound sliced Swiss cheese, divided
½ pound sliced deli roast pork loin, divided
½ pound sliced ham, divided
2 dill pickles, cut into strips lengthwise - divided

Steps:

  • Combine mayonnaise, sour cream, cilantro, green onions, ground chipotle peppers, lime juice, garlic basil spread, cumin, salt, and black pepper in a small bowl. Stir until combined. Cover and refrigerate for at least 1 hour.
  • Preheat oven to 500 degrees F (260 degrees C).
  • Heat olive oil in large skillet over medium-high heat. Stir onions, red pepper flakes, and oregano in the hot oil until onions begin to soften, about 5 minutes. Season with salt and ground black pepper to taste. Add half the jalapeno pepper rings and cook until they begin to soften, 2 to 3 minutes. Reserve remaining jalapeno rings.
  • Spread each ciabatta roll with 1 tablespoon sweet hot mustard and 2 tablespoons chipotle mayonnaise. Evenly divide the Swiss cheese slices, slices of pork loin, ham, dill pickles, and remaining jalapeno rings among the four sandwiches. Top with cooked onion mixture.
  • Place sandwiches onto a baking sheet and bake in the preheated oven until cheese is melted and bread is toasted and warm, 4 to 5 minutes.

There is nothing like a hot mug of frothy Cafe con Leche. This is the traditional breakfast coffee that is drunk by all most all Cuban families. Not to be ignored is the traditional Toastada Cubana. (Cuban toast) Fragarant Cuban bread spilt and butterd inside and on the outside then put in a sandwich press to toast for about three minutes. Resutls crispy buttery outside and tender, moist and buttery inside. I love to dunk my toast in my coffee. It's truly delicious. A great way to start the day. Enjoy

Number Of Ingredients 8

1 1/2 ounce(s) expresso coffee bustelo or pillon or llave are all very good brands
1 cup(s) cold water about a tad less. what ever your expresso maker calls for
2 teaspoon(s) sugar per cup or mug or to suit your taste
20 ounce(s) hot whole milk or 2% or what ever suits your taste.
1 pinch(es) (tiny pinch of salt just a few grains) added to the hot milk
- ~~~~ cuban toast~~~~
1 large loaf of cuban bread cu into thirds , then each cut horizontally in half
3 tablespoon(s) soft butter or a little more

Steps:

  • If you have an Expresso coffee maker follow the instructions and make about a half cup of expresso coffee or as it is sometimes called demi-tas coffee. I have also purchased an on the burner expresso coffee maker. Looks like a little coffee pot. They are relatively inexpensive about $8.00 or $10.00. The smaller ones will make 2 demi-tas cups of expresso coffee and the larger will make 4/6 demi-tas cups of expresso. Can be purchased at any Latin food store or grocery also can be purchased in any Italian grocery store.
  • After you have made your expresso coffee set aside do not add any sugar, Heat your milk to the point of almost steaming do not boil. Add the few grain of salt stir with a spoon and add all of your expresso coffee. Stir well and then add your sugar about 4 tablespoons. Stir again and taste to see if it is sweet enough for you. Some people don't like it to sweet and other's like it sweet. That's up to your taste. Can be drunk as is or accompanied with hot Cuban toast; or a full breakfast. Enjoy
  • Cuban Toast: Split a large loaf of Cuban bread or French or Italian bread horizontally and butter each side. Then close the halfs and butter the outside on both sides. Put into a hot sandwich press, or a George Foreman grill as I do or a panini press, or a hot griddle with a heavy weight to press on top of the toast, such as a cast iron pan. toast about 1 1/2 minutes on each side. When crispy and golden on both sides remove to a dish and cut diagonally. Serve with your hot Cafe con Leche. Delicious; Enjoy
