Steps:
- Add the hash brown potatoes, chopped onion, and chopped green and red bell peppers into the pot of your slow cooker
- Pour in the chicken broth
- Mix in the condensed cream of chicken soup, bay leaves, and season with salt and pepper. Cook on low for 6 hours
- 30 minutes before cook time is over, stir in the softened cream cheese and continue cooking for the remaining time

This easy Crockpot Potato Soup recipe is one of my absolute favorites to make on a busy, cold day! It's literally dump and go and everyone loves it - literally licking their spoons and bowls clean!

Steps:
- Put the hashbrowns in the Crock Pot
- Add in the chicken broth , cream of chicken soup and half of the bacon bits
- Cook on low for atleast 7, up to about 8 hours, or until potatoes are tender
- Add salt & pepper to taste
- About an hour before serving, add the cream cheese to the slow cooker
- Mix a few times throughout the last hour of cooking
- Once the cream cheese is mixed in, the soup is ready to serve.
- Top with bacon bits and cheddar cheese.
