Crock-Pot Chicken Enchilada Soup from Delish.com is the soup you'll be making all winter long.

(19-oz) can red enchilada sauce

1

(28-oz) can fire-roasted diced tomatoes

1

(15-oz) can black beans, drained and rinsed

1

(15-oz) can corn, drained and rinsed

2 lb.

boneless, skinless chicken breasts, cut into thirds

2 1/2 c.

chicken broth

1/3 c.

cheddar cheese, plus more for serving

1/4 c.

heavy cream

Sour cream, for serving

Chopped cilantro, for serving

Sliced lime, for serving

Crushed tortilla chips, for serving

Steps:

  • Combine onion, spices, enchilada sauce, tomatoes, beans, corn, chicken and broth in the bowl of your Crock-Pot. Stir together to combine. Set on high and cook for 3 hours, or until chicken is tender. Remove chicken from Crock-Pot and shred. Return to pot and stir in cheese and cream. Stir and heat on low until cheese is melted. Taste and season with salt if needed. Serve into bowls and top with sour cream, cilantro, crushed chips, more cheddar and a slice of lime if desired.

Using your slow-cooker is the easiest way to make loaded potatoes.

Cooking spray

2 lb.

baby potatoes, halved and quartered if large

3 c.

shredded Cheddar

2

cloves garlic, thinly sliced

8

slices bacon, cooked

1/4 c.

sliced green onions, plus more for garnish

1 tbsp.

paprika

kosher salt

Freshly ground black pepper

Sour cream, drizzling

Steps:

  • Line a slow cooker with foil and spray with cooking spray. Add half the potatoes, 1 1/4 cups cheese, half the garlic, 1/3 of the cooked bacon, half the green onions, and half the paprika. Season with salt and pepper. Repeat. Cover and cook on high until potatoes are tender, 5 to 6 hours. (The bigger your potatoes, the longer they'll need.) About 20 to 30 minutes before serving, top with remaining cheese and bacon (this is your moment to make the potatoes look pretty!). Garnish with more green onions and drizzle with sour cream before serving.

  • In a large skillet over medium heat, heat oil. Add onion and cook until translucent, 3 to 4 minutes. Add garlic and cook until fragrant, 1 minute. Add beef and season with salt, pepper, and Italian seasoning. Cook until no pink remains, then drain grease. Stir in 3 cups of the marinara until combined, and cook 2 to 3 minutes more. In a large bowl, combine ricotta with Parmesan and parsley. Season with salt and pepper and stir until fully incorporated. Grease the bowl of your slow cooker with a nonstick cooking spray or olive oil. Using the remaining marinara, spread a thin layer on the bottom of the crock pot. Next, add a layer of noodles (you’ll have to break some to make them fit), a layer of meat mixture, a layer of mozzarella, and a layer of ricotta mixture. Repeat until all ingredients are used up, ending with mozzarella. Cover and cook on low for 4 to 5 hours. Garnish with more Parmesan and parsley and serve.
