Here is another great recipe from my cookbook that is sure to please seafood & fish lovers alike. Since I am allergic to most seafood, I can't eat it, but I wear gloves & prepare it for my husband Dan. He loves it, & even though I can't have it, I don't feel that I should deprive him of eating it. So this is another quick & easy recipe, that goes great with my Tangy Apple Cole Slaw, and some Macaroni & Cheese. Two of his gavorite side dishes to go with it.

Number Of Ingredients 9

4 - flounder fillets or other fish of your choice
3/4 cup(s) crushed corn flakes, or panko bread crumbs
1 teaspoon(s) dried oregano
- salt & pepper to taste
1/8 teaspoon(s) cayenne pepper
2 tablespoon(s) all purpose flour
2 large egg whites, room temperature
1 1/2 teaspoon(s) paprika (if you use panko bread crumbs)
1 tablespoon(s) dijon mustard

Steps:

  • Preheat oven to 450 degrees F. Grease a baking sheet & set aside.
  • Combine corn flakes or panko crumbs with flour, salt pepper, cayenne pepper, and paprika if using panko crumbs, place in zip lock bag or shallow dish.
  • In a medium mixing bowl beat egg whites until stiff peaks form, then fold in dijon mustard. Dip fillets into egg white mixture, then coat fillets with crumb mixture, being sure to coat all sides.
  • Place coated fish on prepared baking sheet. Bake in oven for 8 minutes or until fish is crispy and cooked through out. Makes 2 to 4 servings depending on appetites. Serve with lemon wedges and tartar sauce.

I was going through a deep desk drawer, looking for a game CD, and the project turned into "cleaning out the drawer." At the bottom of the drawer I found what I was looking for, and I also found some recipes. I have no idea where this came from or who gave it to me, but it looks good and worth trying. Number Of Ingredients 9

3/4 cup(s) cornflake crumbs
1 teaspoon(s) dried oregano
1/2 teaspoon(s) salt, plus additional pinch
1/4 teaspoon(s) black pepper, plus additional pinch
1/8 teaspoon(s) ground red pepper (cayenne)
2 tablespoon(s) all purpose flour
2 - egg whites
1 tablespoon(s) dijon mustard
4 - flounder fillets (1 pound total)

Steps:

  • Combine crumbs, oregano, 1/2 tsp. salt, 1/4 tsp. black pepper and red pepper in a shallow dish,. Place flour in another shallow dish.
  • Beat egg whites in a medium-size bowl until stiff, glossy peaks form. Fold in mustard.
  • Season fish fillets with a pinch each salt and black pepper. Dip fillets into flour to coat both sides, shaking off any excess flour. Spread egg mixture on both sides of floured fish; dip into crumbs, coating well.
  • Place fish on a baking sheet that has been coated with non-stick cooking spray. Bake in a preheated 450º oven for 8 minutes or until fish is crisp and cooked through.
