This is the way my family likes noodles served. It is easy and quick. Start the croutons when you put the water on to boil and they should be ready when the noodles are done. Of course, you can use extra butter but I try to restrain myself. Once the croutons are mixed in with the noodles everything does become buttery.

Number Of Ingredients 5

12 ounces egg noodles (could be a bit more, just add more butter)
1/2 cup unsalted butter or 1/2 cup salted butter
2 slices white bread (day old is good, I have also used multigrain and it is good too)
1 pinch salt (to taste)
1/4 teaspoon pepper (to taste)

Steps:

  • Cook noodles according to package directions.
  • When you put the water on to boil, place the butter in a small frying pan over medium heat.
  • Tear the bread into small pieces for the croutons.
  • When the butter is melted and sizzling (don't let it brown) add the pieces of bread.
  • Watch the bread carefully and stir frequently so that it doesn't burn but will get crispy.
  • Add the salt and pepper to the croutons.
  • When the noodles are cooked, drain and place in your serving bowl.
  • Add the croutons; stir to distribute well.
  • Serve and enjoy!

Consume noodles differently with this crispy noodle recipe. Fried noodles are served with a savory sauce and topped with fresh veggies.

14 fl oz or Pancit canton egg noodles
1 cup boneless, sliced chicken breast
1 cup shelled and deveined shrimps
2 fl oz or pechay bok choy
1 tbsp sesame oil
2 cup chicken broth
3 tbsp oyster sauce
1/2 tsp five spice powder
3/4 cup julienne carrots
3/4 cup chopped long green beans
1 sliced in strips red bell pepper
2 tbsp diluted in 3 tablespoons water cornstarch
1 tbsp minced garlic
to taste salt
to taste ground black pepper
3 cup cooking oil

Steps:

  • Heat a wok and pour-in cooking oil.
  • Deep Fry the noodles in medium heat until texture becomes crisp and crunchy.
  • Turn-off heat and transfer fried noodles on a serving plate (make sure to let excess oil drip).
  • Reduce the cooking oil from the same wok to 3 tablespoons and apply heat.
  • Saute garlic and add chicken slices. Cook for 5 minutes.
  • Add shrimps then stir.
  • Put-in the green beans, red bell pepper, and carrots. Stir-fry for 3 to 5 minutes.
  • Add bok choy and chicken broth. Bring to a boil and simmer for 3 minutes.
  • Add the oyster sauce, five spice powder, and sesame oil, and cornstarch diluted in water. Cook until sauce thickens.
  • Pour sauce on top of arranged fried noodles.
  • Serve hot. Share and enjoy!

  • To make the crispy crumbed egg, place a large piece of cling film in a small bowl. Brush the cling film with oil. Crack an egg into the cling film, then gather up the sides and twist to form a loose ball. Tie to secure. Repeat with one more egg. Cook the eggs in boiling water for 5 minutes. Then place them in a large bowl of iced water. Allow to cool. In the meantime, cook the noodles. Heat a pot of water over high heat until boiling. Add the noodles and allow to rest for a few seconds. Then use your tongs to gently shake the noodles apart. Once the noodles are separated, drain and transfer to the bowl of ice with the eggs. To crumb the eggs, place the remaining 2 eggs into a bowl and whisk them together. Place the flour and breadcrumbs in two other separate bowls. Unwrap each egg then dip each into the flour, then egg and then the breadcrumbs. Set aside while you stir-fry your noodles. To make the stir-fry sauce, combine the ingredients. Heat 1 tablespoon of vegetable oil in a wok or frying pan over high heat. Add the bacon and cook for 1-2 minutes or until starting to get crispy at the edges. Then add the onion and stir-fry for another minute. Add the gochujang paste and cook for another minute. Stir through the chilli flakes. Add the kimchi and stir-fry for another 30 seconds. Add the drained noodles and mix until combined. Add the stir-fry sauce and cook for another 30 seconds or until thickened slightly. Turn the heat off and keep warm while you cook your eggs. Heat a small saucepan of oil over high heat. When the oil is hot add the crumbed eggs and cook until golden. Drain on paper towel. Serve noodles topped with the crispy, crumbed egg and sprinkle with spring onions. *NOTES: You can find pre-cooked vacuum-sealed packages of udon noodles in the Asian aisle or fridge section of major supermarkets or from your Asian grocer. You can also find frozen udon noodles at your Asian grocer. Korean gochujang is a fermented chilli paste available in the Asian aisle of the supermarket or from your Asian grocer.
