Creole Pasta with Sausage and Shrimp Recipe: How to Make It image

A creamy white sauce pairs well with the andouille sausage and slightly spicy seasonings in this pleasing pasta dish from our Test Kitchen.

6 ounces uncooked fettuccine
1 large onion, chopped
2 celery ribs, chopped
1/2 cup each julienned sweet red, yellow and green pepper
1/4 cup chopped green onions
6 garlic cloves, minced
4 tablespoons butter, divided
1-1/2 cups heavy whipping cream
1/4 cup white wine or chicken broth
1/4 to 1/2 teaspoon Creole seasoning
1/4 teaspoon salt
1/8 to 1/4 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
1/2 pound fully cooked andouille sausage, sliced
1/2 pound uncooked medium shrimp, peeled and deveined
2 cups chopped tomatoes

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a large skillet, saute the onion, celery, peppers, green onions and garlic in 2 tablespoons butter until tender. Stir in the cream, wine, Creole seasoning, salt, pepper flakes and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5-6 minutes or until thickened., In another large skillet, saute sausage and shrimp in remaining butter for 5-6 minutes or until shrimp turn pink. Drain fettuccine; toss with vegetable mixture, tomatoes and sausage mixture.

Penne pasta,250 gramsTomatoes,1 1/2 cupsSalt, to tasteOlive oil,3 tablespoonsOnions,sliced thickly3 largeGarlic,crushed6 clovesGinger,finely chopped1 inch pieceGreen chillies,cut diagonally4 Tomato concasse,1 1/2 cupsFresh thyme,1 sprigsFresh parsley,chopped1 teaspoonFresh coriander leaves,chopped1 tablespoon

Steps:

  • Boil the pasta in plenty of salted water till just cooked or al dente. Drain and set aside.
  • Heat two tablespoons olive oil in a pan. Add onions, garlic and ginger and sauté for two minutes. Add green chillies and tomato concasse and mix. Add the pasta to the sauce.
  • Add salt, fresh thyme, parsley and coriander leaves and mix. Add a little water if the mixture is too dry. Transfer into a serving dish.
  • Drizzle the remaining olive oil and serve immediately.

  • Bring large pot of cold water to boil. Season with plenty of salt and throw in pasta shells. Cook until almost done. It’s better if they’re slightly under-cooked, as they’ll continue to cook while baking. Drain, rinse with cold water and set aside. Set large skillet over medium-high heat. Add 2 tablespoons butter and once melted, throw in sausage. Cook until browned and crispy on all sides, about 4 to 5 minutes. Using slotted spoon, transfer sausage to plate or platter, leaving the drippings in the skillet. Add chicken to hot skillet and cook until browned as well, about 5 to 6 minutes. Transfer to the plate with sausage. Add remaining 2 tablespoons of butter to skillet and add veggies, bay leaves and thyme. Cook until softened, about 8 minutes. Once melted, whisk in flour and cook for about 30 seconds. Slowly add half and half and milk while continuously whisking. Lower heat and cook until sauce has thickened. Season with Creole seasoning and hot sauce. Preheat oven to 350°F. Pour about a cup of sauce into 9 by 13-inch baking dish and spread it out in an even layer. Fill each pasta shell with about a tablespoon or so of filling and place in baking dish. Continue filling all shells and placing them snugly into baking dish. Pour remaining sauce on top of shells and sprinkle with remaining mozzarella cheese. Bake until bubbly and melted, about 15 to 20 minutes. Place under broiler (keeping an eye on it) for the last 5 minutes of cooking to brown top. Remove from oven and garnish with scallions. Enjoy immediately!
