A hearty fish pie to warm your tummy.

1 onion small, very finely chopped
30 ml fresh chillies 573
lemon zest and juice
15 ml dried dill
250 ml crème fraîche
250 ml cheddar cheese mild white, grated
2 eggs whole
1x213 g salmon pink, tinned in brine
125 g smoked salmon chopped
sea salt and freshly ground black pepper
1 baked pastry shell
30 ml fresh parsley chopped

Steps:

  • Sauté the onion in the olive oil until translucent then transfer to a mixing bowl. Add the lemon rind, lemon juice, dill, crème fraîche-and-sour-cream mixture and half the grated cheese. Mix well. Beat the whole eggs and egg yolks well and whisk into the mixture. Season to taste with milled sea salt and black pepper.Drain the canned salmon well and stir the brine into the egg mixture. Remove the visible bones and skin from the canned salmon and flake coarsely. Mix with the smoked salmon pieces and then place the fish into the bottom of the pre-baked crust. Pour the egg mixture over the fish and top with the remaining grated cheese and parsley, dill or fennel. Bake in a preheated oven at 180 ºC for 35 – 45 minutes or until cooked but slightly wobbly in the center. Remove from oven and allow to rest for 5 – 8 minutes before serving. Crust
1/4 cup Land O Lakes® Butter
3/4 cup finely crushed dried crumbly-style herb seasoned stuffing
Filling
2 cups crushed dried crumbly-style herb seasoned stuffing
4 ounces (1 cup) shredded Cheddar cheese
1 cup water
1/2 cup milk
1 (16-ounce) can red salmon, * drained, skin and bones removed, flaked
2 large Land O Lakes® Eggs
2 tablespoons chopped fresh parsley
1 tablespoon finely chopped onion
1 teaspoon instant chicken bouillon granules
1/2 teaspoon dry mustard
Sauce
1/3 cup Land O Lakes® Butter
2 tablespoons cornstarch
1 1/3 cups water
1 teaspoon dried dill weed
1/2 teaspoon salt
2 medium (2 cups) tomatoes, cubed 1/2-inch

Steps:

  • Heat oven to 350°F.
  • Melt 1/4 cup butter in 3-quart saucepan; stir in 3/4 cup finely crushed stuffing. Press stuffing mixture on bottom and up sides of greased 9-inch pie pan; set aside.
  • Stir together all filling ingredients in same saucepan; spoon into crust. Bake 50-55 minutes or until heated through. Let stand 10 minutes.
  • Melt 1/3 cup butter in 2-quart saucepan. Stir in cornstarch. Stir in all remaining sauce ingredients except tomatoes. Cook over medium heat, stirring occasionally, 5-7 minutes or until mixture comes to a full boil. Add tomatoes; boil 1 minute.
  • Cut pie into 6 wedges; serve sauce over wedges.
