1/4 cup margarine
1/4 cup flour
2 cups milk
1 can drained tuna fish
1 cup frozen peas (or to taste)
salt and pepper
bread (for toasting)

Steps:

Thaw frozen peas in a collendar.
Melt the margarine in a saucepan.
Add the flour and blend.
Add the milk, stirring constantly to prevent clumping and stir until creamy.
Add the tuna, peas, salt and pepper and warm through.
As the tuna is warming, toast bread.
After toasted, cut in triangles and spoon tuna mixture over the toast.

My mom gave me this recipe. It is different from most of the cream tuna on toast recipes I have seen because it has lots of cheese.

Ingredients

2 (6 ounce) cans tuna
2 tablespoons real butter
1/4 cup flour
2 1/2 cups milk
1 cup shredded cheese
1/4 teaspoon celery salt
1/4 teaspoon onion powder
8 slices bread
1/2 cup peas

Steps:

In a medium saucepan melt butter, stir in flour and spices until mixture is thick creamy paste. Slowly stir in milk being careful to constantly stir to prevent lumping. Add cheese. Add tuna after cheese has melted into mixture. Simmer over low heat for ten minutes.
Toast bread, then pour over layer of creamed tuna -- Enjoy.

But, Mama also told us that you shouldn't drink milk with fish. So when I found out she used milk to make this for us, I had some moments of uncertainty ... was my saint of a mother trying to get rid of me?? LOL! Bottom line, it always reminds me of home and four hungry kids whose mom always served up dishes made with lots of love!
