After a number of unsatisfactory attempts at making deep-fried poppers, I modified a recipe by Emeril that is much easier than frying and everyone in our family agrees that these are at least as good as -- if not better than -- any fried poppers they have had! We love hot peppers and always make a lot of these from the ones we grow in our garden every year.

8 ounces cream cheese, softened
1 cup finely shredded Cheddar cheese
1?½ tablespoons taco seasoning mix
12 jalapeno peppers, halved lengthwise and seeded
2 tablespoons fine bread crumbs, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking sheet with foil or parchment paper.
  • Blend cream cheese, Cheddar cheese, and taco seasoning together in a bowl; spread into jalapeno halves and arrange onto prepared baking sheet. Sprinkle bread crumbs over the cheese filling.
  • Bake until the peppers are just tender, 20 to 30 minutes.

We all know that the addictiveness of the savory everything spice blend is amplified when paired with smooth cream cheese. Each popper is bursting with flavor and a variety of optional toppings keeps each bite interesting (and makes for a gorgeous platter). It seems you've found your new go-to party appetizer. Make sure that the jalapenos are par-cooked  before adding the cream cheese filling to ensure that the cream cheese doesn't burn.

Yield Serves 12 (serving size: 2 poppers)

Number Of Ingredients 10

12 medium jalapeño chiles, halved lengthwise and seeded
1 (8-oz.) pkg. cream cheese, softened
2 tablespoons white sesame seeds
2 tablespoons poppy seeds
4 teaspoons dried minced garlic
4 teaspoons dried minced onion
3 cooked bacon slices
2 ounces smoked salmon, cut into 2- x 1/2-inch slices
3 tablespoons crispy fried onions (such as French’s)
? cup red pepper jelly

Steps:

  • Preheat oven to 400°F. Line a baking sheet with aluminum foil; place jalapeño halves, cut side up, on baking sheet. Bake in preheated oven until slightly tender, about 15 minutes.Remove from oven, and cool 5 minutes.
  • Meanwhile, combine cream cheese, sesame seeds, poppy seeds, minced garlic, and minced onion in a medium bowl. Beat with an electric mixer on medium speed until fully combined, about 2 minutes. Fill each jalapeño half with about 2 teaspoons of the cream cheese mixture. Return to oven, and bake until jalapeños are tender and cream cheese mixture is golden brown, 15 to 17 minutes.
  • Top poppers as desired with bacon, smoked salmon, and crispy onions. Serve with red pepper jelly.
