Chocolate Bundt Cake with Cream Cheese Filling - i am baker image

1¾ cups (375g) granulated sugar
1¾ cups (219g) all-purpose flour
¾ cup (65g) unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
½ cup (109g) vegetable oil
2 large (or extra large) eggs, (room temperature)
¾ cup (173g) sour cream
½ cup (123g) buttermilk
½ cup (119g) prepared coffee
12 ounces (340g) cream cheese, (softened )
¼ cup (50g) granulated sugar
1 teaspoon McCormick vanilla extract

Steps:

  • Preheat the oven to 350°F.
  • In a large bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt. Set aside.
  • In a separate bowl, whisk together oil, eggs, sour cream, and buttermilk.
  • Pour the wet ingredients into the dry ingredients and stir to combine. Add the coffee, and whisk until the batter is completely combined. Set aside.
  • In a separate bowl and using a hand-held mixer, beat the cream cheese until it is smooth. Add in the sugar and vanilla and stir until combined.
  • Pour HALF of the chocolate batter evenly into the prepared bundt pan.
  • Spoon on the cream cheese filling and carefully spread it evenly on top, avoiding the sides of the pan.
  • Pour the remaining half of the chocolate batter evenly on top.
  • Bake for 55-60 minutes or until a toothpick inserted into the cake comes out mostly clean. (I like to use a long skewer here so that I can test the cake below the cream cheese.)
  • Remove from the oven and allow to cool for a few minutes in the pan. Invert the chocolate bundt cake onto a serving plate. Allow the cake to cool completely, then refrigerate for 2 hours.

I gave this recipe to my daughter who has 6 children. They love this, and it is so simple they can make it themselves which they love to do. If desired, a thin mixture of powder sugar frosting can be poured over warm biscuits.

Number Of Ingredients 5

3 (10 ounce) packages refrigerated biscuit dough
¾ cup white sugar
3 tablespoons ground cinnamon
½ cup margarine
¾ cup white sugar

Steps:

  • Mix together 3/4 cup sugar and cinnamon.
  • Quarter the biscuits with kitchen shears. Dip shears in water after each cut to keep the biscuits from getting too sticky. Dip biscuits into sugar mixture, and place in a greased tube pan. Do this until all biscuits are used.
  • Melt butter or margarine, and mix in 3/4 cup sugar. Pour mixture over biscuits.
  • Bake in a preheated 350 degree F (175 degrees C) oven for 30 to 35 minutes.

  • Dissolve yeast in warm water. Melt 5 tablespoons butter. Add milk, eggs and melted butter; stir in 1/4 cup sugar, salt and 3 cups flour. Beat on medium speed for 3 minutes. Stir in enough remaining flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Refrigerate, covered, overnight., Punch dough down; shape into 40 balls (about 1-1/4 in. diameter). Melt remaining butter. In a shallow bowl, combine cinnamon and remaining sugar. Dip balls in butter, then roll in sugar mixture., For caramel, bring brown sugar, butter and cream to a boil in a small saucepan over medium heat. Cook and stir 3 minutes. Pour half of the caramel into a greased 10-in. fluted tube pan; layer with half the pecans and half the dough balls; repeat. Cover and let rise until doubled, about 45 minutes., Preheat oven to 350°. Bake until golden brown, 30-40 minutes. (Cover loosely with foil for last 10 minutes if top browns too quickly.) Cool 10 minutes before inverting onto a serving plate., For optional glaze, beat cream cheese and butter until blended; gradually beat in confectioners' sugar. Add enough milk to reach desired consistency. Drizzle glaze over warm bread.
