Cranberry Nut Bars Recipe: How to Make It image

My husband's aunt sent us these bars one Christmas. The fresh cranberry flavor was such a nice change from the usual cookies. I had to have the recipe, and she was gracious enough to provide it.

Number Of Ingredients 10

1/2 cup butter, softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup chopped fresh or frozen cranberries
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Stir in cranberries and walnuts., Spread into a greased 13-in. x 9-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown. Cool on a wire rack. Cut into bars.

Crust:
2-1/2 cups all-purpose flour
1 cup butter or margarine, cut into pieces
1/2 cup powdered sugar
1/2 teaspoon salt
Filling:
1-1/3 cup Karo® Light Corn Syurp
4 eggs
1 cup granulated sugar
3 tablespoons melted butter
2 cups fresh or thawed frozen cranberries, coarsely chopped
2 cups Fisher® chopped walnuts
1 cup white chocolate chip

Steps:

  • Preheat oven to 350°F. Spray 17 x 11 x 1 inch baking sheet with cooking spray. Beat flour, 1 cup butter, powdered sugar and salt together in a large bowl at medium speed until mixture resembles coarse crumbs; press firmly and evenly into prepared pan. Bake 15 to 20 minutes or until golden brown.
  • While crust is baking, beat corn syrup, eggs, granulated sugar and melted butter in a large bowl until well blended. Stir in the cranberries and walnuts.
  • Spread mixture evenly over hot crust. Sprinkle white chocolate chips over the top. Bake 20 to 25 minutes or until set. Cool completely on a wire rack before cutting into bars. Store leftover bars in refrigerator to keep fresh.

  • Make crust: Preheat oven to 350°F. Pulse walnuts in a food processor until finely chopped, 12 to 15 times. Add flour and salt, and pulse to combine, 5 to 6 times. Immediately pour over crust.  Chill 12 hours or up to 1 day. Slice into 16 bars and top with whipped cream and candied cranberries, if desired.
