Number Of Ingredients 10

1 (9 inch) deep dish pie crust
1 cup cranberries
3 eggs
? cup white sugar
1 cup dark corn syrup
6 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
¼ teaspoon ground mace
? teaspoon salt
1 cup pecan halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Finely chop cranberries in food processor or by hand. Spread into bottom of pastry-lined pie pan.
  • In a large bowl beat eggs until frothy. Add sugar, corn syrup, melted butter or margarine, vanilla, mace, and salt. Mix well. Pour mixture over cranberry layer. Neatly arrange pecan halves on top of sugar mixture.
  • Bake in preheated oven for 45 to 50 minutes, until golden and set in center.

1 seedless orange with peel left on, cut into large chunks (see Tip)
1 apple, cored and cut into large chunks
2 cups fresh cranberries (see Tip)
1/2 cup sugar
1/4 cup pecans

Steps:

  • Place all ingredients in a food processor that has been fitted with its metal cutting blade. Process 1 to 2 minutes or until finely chopped and thoroughly mixed, scraping down sides of container as needed.
  • Serve immediately, or transfer to an airtight container and chill until ready to serve.

  • 1. Make the Cookies: In the bowl of a food processor, grind the pecans into a fine powder. Set aside. 2. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar until light and fluffy, about 3 minutes. Add the vanilla and mix well to combine. 3. Add the flour, pecan mixture and salt, and mix to combine. Scrape the bowl well to ensure everything is homogenous. Transfer the mixture to a piece of plastic wrap and form into a 1-inch-thick disk. Wrap tightly and refrigerate for 1? hours or overnight. 4. Line two baking sheets with parchment paper. On a lightly floured surface, roll out the chilled dough to ? inch thick. Turn over the un-sugared cookies and scoop a heaping tablespoon of filling on top. Sandwich each with a sugared cookie and gently press together.
