1 bag (12 oz) fresh cranberries
1 medium mango, peeled and diced
1/2 cup sugar
2 tablespoons cider vinegar
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1/8 teaspoon crushed red pepper flakes

Steps:

  • In nonreactive 2-quart saucepan, stir together all ingredients. Heat to boiling over high heat, stirring occasionally. Reduce heat to medium-low. Cook 20 to 25 minutes, stirring occasionally, until cranberries pop and sauce thickens slightly.
  • Pour into serving bowl; cover and refrigerate until ready to serve.

1 tablespoon vegetable oil
1 cup finely chopped onion
1 cup diced red bell pepper
4 teaspoons curry powder
1 cup chopped peeled mango
1 cup cranberries
½ cup orange juice
¼ cup golden raisins
2 tablespoons white vinegar
2 tablespoons chopped green onions
2 tablespoons chopped fresh cilantro
? teaspoon salt
? teaspoon black pepper
Dash of ground red pepper

Steps:

  • Heat oil in a large saucepan over medium-high heat. Add onion, bell pepper, and curry powder; saute 3 minutes. Add chopped mango, cranberries, juice, raisins, and vinegar; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes. Remove from heat; stir in green onions and remaining ingredients. Serve with pork, poultry, or game.

  • Peel the mango peel, cut the flesh from the core and dice. Rinse the cranberries. Peel the ginger and finely chop. Wash the chiles, cut in half, remove the seeds and ribs and finely chop. Peel the onions, cut into quarters and chop. Saute the onions and chiles in a hot pan with oil until onions are translucent. Deglaze with the vinegar, apple juice and 100 ml (approximately 1/3 cup) of water. Season with turmeric, mustard, salt, sugar and pepper and bring to a boil. Reduce heat and simmer about 5 minutes. Add the mango and cranberries, simmer for about 15 minutes, season to taste and pour into prepared jars. Tighten lids, invert and let cool. Tip: To preserve the chutney for longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
