Creamy Cranberry Jell-O® Salad Recipe | Allrecipes image

This is my favorite Thanksgiving dish! The sweetness is a nice contrast to the saltiness of the turkey. The walnuts and apples give a nice texture, but make sure they are chopped small enough. The mayo seems like a strange addition, but you don't taste it, and it improves the texture of the cream cheese. Enjoy!

1 (8 ounce) can crushed pineapple, drained and juice reserved
1 (16 ounce) can whole berry cranberry sauce, drained and juice reserved
1?½ cups water, or as needed
2 (3 ounce) packages raspberry-flavored gelatin mix (such as Jell-O®)
1 (8 ounce) package cream cheese at room temperature
2 tablespoons mayonnaise
1 cup frozen whipped topping (such as Cool Whip®), thawed
1 tart apple, peeled and finely chopped
½ cup chopped walnuts
½ cup frozen whipped topping (such as Cool Whip®), thawed - or to taste

Steps:

  • Pour juice from crushed pineapple and cranberry sauce in a measuring cup and add enough water to equal 2 cups of liquid; bring to a boil in a saucepan. Remove from heat and dissolve raspberry gelatin in the liquid. Pour gelatin into a bowl and refrigerate until partly set, about 45 minutes.
  • Beat cream cheese with mayonnaise in a bowl with an electric mixer until fluffy; gradually beat partially set gelatin into cream cheese mixture. Gently fold 1 cup whipped topping into the mixture. Stir crushed pineapple, cranberry sauce, apple, and walnuts into gelatin mixture. Transfer to a serving bowl and refrigerate until set, about 4 hours. Serve frosted with 1/2 cup whipped topping, or as desired.

Perfect for a holiday dinner or anytime when something tart yet sweet will only do. Your family and guests will love the slightly crunchy texture along with the creamy topping. This recipe was given to me by a friend, and I hope that you will enjoy it as much as we do.

1 lb fresh cranberries
1 (20 ounce) can crushed pineapple
1/2 cup walnut pieces (or amount as desired)
2 packages raspberry Jell-O gelatin
2 cups boiling water
1 cup cold water
1 3/4 cups sugar
2 (8 ounce) packages cream cheese

Steps:

  • Pick over cranberries.
  • Chop cranberries in food processor until fine.
  • Mix cranberries with sugar and let stand until sugar dissolves.
  • Add 2 cups of boiling water into jello, and stir until the jello dissolves.
  • Then add the 1 cup of cold water to the jello mixture.
  • Let stand until cooled.
  • Drain pineapple and reserve the juice.
  • Add the pineapple, cranberries, and walnuts, and stir well.
  • Pour into 9x13 dish.
  • Chill to set.
  • With a mixer, blend enough reserved pineapple juice into the cream cheese, until it becomes the consistency of whipped cream.
  • Spread over the top of the chilled gelatin.
  • Keep cold.

This Cranberry Mousse Jello Mold Salad has been a favorite in our family for many years especially at Thanksgiving and Christmas. I found it in a magazine years ago and credit for this goes to Helen Clement of Hemet, California. I chose to reduce her nutmeg amount from 1/2 to 1/4 teaspoon , which gives it just a tiny hint of nutmeg, you may not even notice it. This jello mold is so delicious! And so pretty! It is a nice contrast on the plate (and palate!) with a meat and gravy meal. Enjoy!

Chill in the refrigerator uncovered for about 1 and 1/2 hours, or until the mixture thickens. 5. With a rubber spatula, fold in the sour cream, crushed pineapple, and pecans. 6.
