Here's an easy dip recipe I got from a co-worker - it's a nice change from the usual cheese-based Rotel dip, and always a hit at parties! You can use mild or hot sausage, whatever you prefer.

- Brown sausage in skillet; drain excess grease.
- Add cream cheese and cook over medium heat until melted.
- Add Rotel and mix well.

This dip is an absolute hit everytime I make it! My husband and all of our friends devour it and it's always the first to go! It has a nickname of "white trash dip". I make it in a round 4 quart crock pot, but the recipe can be halved or doubled for smaller or larger crock pots.

Steps:
- Brown both packages of sausage in a skillet over medium heat.
- Drain the sausage in a colander.
- Cube the cream cheese into a crock pot.
- Add the sausage to the cream cheese in the crock pot.
- Add both cans of rotel (with the juice) to the crock pot.
- Heat the mixture in the crock pot on high heat for approximately 1 hour, stirring occasionally until the dip is well mixed.
- Reduce heat to warm/low and serve with tortilla chips.

- Preheat oven to 375°. Grease a mini muffin tin with cooking spray. In a large bowl, combine spinach, artichokes, cream cheese, sour cream, 1 cup mozzarella, Parmesan, and garlic. Season with salt and pepper. On a lightly floured surface, roll out crescent dough, pinching seams together. Cut into 24 squares. Place squares into muffin tin slots and spoon 1 tablespoon of dip into the dough. Top with remaining mozzarella. Bake until pastry is golden and cheese is melted, about 15 minutes.
