Crab Fries with Beer-Cheese Sauce - Yes to Yolks image

These Crab Fries with Beer-Cheese Sauce are a homage to an East Coast bar and restaurant staple. Hot, crispy fries tossed in Old Bay spice and served with a gooey, melty beer cheese sauce that will make you go weak in the knees!

Number Of Ingredients 11

1 bag of frozen french fries**
Old Bay spice, to taste
Salt and pepper, to taste
1 tablespoon butter
1 tablespoon flour
1 garlic clove, pressed or grated
1 cup whole milk
½ cup beer (I used a standard lager)
2 cups shredded American cheese (cheddar or jack work well too!)
Dash of hot sauce
Salt and pepper

Steps:

  • Spread the fries out on a baking sheet and drizzle lightly with canola or olive oil. Season liberally with salt and pepper and toss with hands to evenly coat all the fries.
  • Bake according to the package directions, or until golden and crispy. As soon as they come out of the oven, place in a large bowl and douse with Old Bay spice (this is definitely a “to taste” ingredient, so add as much or as little as you like). If needed, sprinkle with more salt. Transfer the seasoned fries to a serving dish and eat while hot.

My version of our local Chickie & Pete's Restaurant Crab Fries. No crab meat is in the recipe, just the seasoning. These were created for the customers missing crabs in the months crabs were not available.

2 (16 ounce) packages frozen crinkle-cut French fries
3 tablespoons vegetable oil
2 tablespoons seafood seasoning (such as Old Bay®), or more to taste
¼ cup milk
½ teaspoon seafood seasoning (such as Old Bay®)
8 ounces white American cheese (such as Kraft® Deluxe), diced

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Toss French fries and oil together in a large bowl. Add 2 tablespoons seafood seasoning and toss to coat. Place on the prepared baking sheet.
  • Bake in the preheated oven until crispy, 35 to 45 minutes.
  • While fries are baking, make the cheese sauce by combining milk and seafood seasoning in a heavy-bottomed saucepan over low heat. Add cheese when milk begins to steam and little bubbles begin to form around the edges. Stir gently and frequently until all cheese is melted. Serve immediately on the side as a dipping sauce with hot fries.

Evaporated milk and cream are poured into the pan and only heated without boiling. 2. After sprinkling with Cajun seasoning and onion powder, cheeses are added. 3. Stir constantly until the cheese melts and the prepared sauce coats the spoon. After 4-5 minutes of boiling, the bottom is closed. The sauce will thicken as it peels. 4. After the desired potatoes are fried as desired, crawfish, queso sauce and parsley are added on it, respectively. 5. Bon Appetit.
