These appetizer bites are a mini way to enjoy crab cakes for your next gathering. Crab, fresh chives and spices are folded into bread crumbs, shaped and baked for the perfect bite. Serve with lemon-garlic sauce for dipping.

1/2 cup mayonnaise
1 egg
2 tablespoons chopped fresh chives
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
1 1/2 teaspoons Old Bay™ seafood seasoning
1 teaspoon fresh lemon juice
2 containers (8 oz each) refrigerated pasteurized lump crabmeat, cleaned
2/3 cup Progresso™ plain panko crispy bread crumbs
1 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon finely chopped garlic
2 teaspoons fresh lemon juice
1/4 teaspoon salt
Lemon wedges

Steps:

  • Heat oven to 400°F. Line large cookie sheet with cooking parchment paper.
  • In medium bowl, stir together 1/2 cup mayonnaise, the egg, chives, Worcestershire sauce, 1 teaspoon Dijon mustard, seafood seasoning and 1 teaspoon lemon juice. Fold in crabmeat and bread crumbs until well blended (mixture will be moist). Using measuring tablespoon, shape mixture into 36 (1 1/2-inch) balls. Place on cookie sheet.
  • Bake 16 to 20 minutes or until lightly browned and hot in center. Cool 5 minutes.
  • Meanwhile, in small bowl, stir together Lemon-Garlic Sauce ingredients until blended. Serve bites with sauce and lemon wedges.

lump crab meat

6 oz.

cream cheese, softened to room temperature

Egg, lightly beaten

3/4 c.

Sour Cream, Divided

2/3 c.

finely grated Parmesan, divided

1 1/2 tsp.

Old Bay seasoning, divided

2 tsp.

lemon juice

1 tsp.

lemon zest

Pinch cayenne pepper

2 tbsp.

finely chopped chives, divided

kosher salt

Freshly ground black pepper

1 c.

panko bread crumbs

6 tbsp.

butter, melted

Steps:

  • Preheat oven to 350°. Grease a 24-cup mini muffin pan with cooking spray. Combine crab meat, cream cheese, egg, ⅓ cup Parmesan, 1 teaspoon Old Bay, ¼ cup sour cream, lemon zest, 1 teaspoon lemon, cayenne and about 1 tablespoon chives in a large bowl. Season with salt and pepper and stir until evenly combined. In a separate bowl, combine remaining Parmesan, panko bread crumbs and melted butter. Divide mixture between muffin pan cups and press around the edges of cup to make a crust. Spoon the crab mixture into each cup. Bake until the edges begin to turn golden, 20 to 25 minutes . Meanwhile, make dipping sauce. Combine ½ cup sour cream, remaining chives, 1 teaspoon lemon juice and remaining Old Bay. Stir to combine. Serve crab cake bites warm or at room temperature with dipping sauce.

IMITATION CRAB DIP - JUST A PINCH RECIPES
I love crab dip but when my 3 sons were growing up I couldn't afford crab. In fact, the only crab in the house was ME! I got this recipe from a friend years ago. I believe I ate the entire bowl in one sitting. The imitation crab is just a white fish that you can find packaged in the fish section of the grocers. It's already packaged. Looks like crab,too. This would be a great appetizer to serve while you're finishing up with your Easter Dinner preparations.
