Steps:
- Place the potatoes in a bowl; toss with the salt and pepper until the potatoes are well coated. Heat the oil in a heavy oven-safe skillet and drop in the potatoes carefully, a few at a time.
- Flip potatoes several times with tongs during cooking to ensure even browning.
- About halfway through cooking, add the onion and mix while cooking. When they're done, the potatoes should be crispy. Sprinkle on the rosemary leaves. Spoon out unwanted oil, if you wish.
- While potatoes are cooking, in a nonstick pan, saute the Italian sausage over medium-high heat for a few minutes, or until it is no longer pink.
- Add the sausage to the potatoes and onion. Mix it very well and break eggs (sunny side up) into the pan; add few dashes of salt to season eggs. Try to go in between the potatoes, allowing the egg whites to go all around and under potatoes and sausage; try not to break egg yolks. Once the egg whites are getting almost cooked, turn on the broiler to high, and set a baking rack in the middle of the oven.
- Place the pan under the broiler and let it cook for a minute or two, just so the egg whites are completely cooked; the yolks may be still a little runny/soft. If you do not like runny/soft eggs just let them cook under broiler longer. Sprinkle chopped chives or scallions on at the end and dig in!

- Add canola oil to large skillet over medium-heat. Heat oil. Add potatoes to skillet. Season with salt and pepper. Brown potatoes until crisp. Add1/2 cup cheddar cheese, eggs, bacon, remaining cheese and scallions. Bake at 350 degrees F for 10 minutes, or until eggs have set and cheese has melted.

- "1) Preheat broiler to high. Wash and dry all produce. Medium dice potatoes into ½-inch cubes. Core, deseed, and medium dice long green pepper. Halve, peel, and small dice onion. Peel and finely chop garlic. Finely chop jalapeño, removing seeds if you prefer less heat. 2) Place potatoes in a medium pot with enough salted water to cover by 2 inches. Bring to a boil and cook until very tender, about 12 minutes. Drain and return to pot. Cover to keep warm. 3) Meanwhile, heat a drizzle of oil in a medium oven-safe pan over medium-high heat. Add long green pepper and season with salt and pepper. Cook, stirring occasionally, until lightly browned and softened, 3-4 minutes. Add onion and season with salt and pepper. Cook, stirring, until softened and beginning to brown, 4-5 minutes more. 4) Add garlic and as much jalapeño as you’d like (reserving some for garnish) to pan. Cook, stirring, until fragrant, about 30 seconds. Add beef, seasoning, and a pinch of salt and pepper. Cook, breaking up meat into pieces, until browned and cooked through, about 5 minutes. Add 1 TBSP flour. Cook, stirring to coat, for 1 minute. 5) Gradually stir in ½ cup water. Add stock concentrate and 1 TBSP ketchup and stir to combine. Simmer until thickened, 1-2 minutes. (Mixture should be the consistency of a very thick chili.) Taste and season with salt and pepper. Remove from heat. (If your pan isn't oven-safe, transfer beef mixture to a baking dish.) 6) Mash potatoes with 2 TBSP butter, sour cream, and a couple splashes of water (or milk, for a richer experience), as needed, until smooth. Season with salt and pepper. Spread mashed potatoes on top of beef mixture, leaving roughly a 1-inch gap around edge of skillet. Broil until bubbling, about 3 minutes. Sprinkle over as much remaining jalapeño as you’d like (if desired)"

- Preheat the oven to 375 degrees. Remove the tater tots from the freezer to let them thaw slightly while you prepare the filling. Heat a large skillet over medium heat. Add the bacon and cook until golden brown and extra crispy, 6-8 minutes. Remove to a paper towel lined plate and leave the grease in the skillet. Set all of the bacon aside for topping later. Add the onion to the skillet and cook until slightly softened, about 4 minutes. Add the garlic and cook 1 more minute. Add the ground beef and break into small pieces with a wooden spoon. Cook the meat until no pink pieces remain, 6-8 minutes. Drain off excess fat or liquid, if you like. Remove skillet from the heat. Stir in the soup, milk, salt and ½ teaspoon black pepper and mix until smooth. Fold in the spinach to wilt slightly, then the corn. Sprinkle the cheddar cheese evenly over the top of the casserole. Place the tater tots on top in a single layer, arranging them in concentric circles (or just toss them on and push them very close together.) Sprinkle the top with parmesan cheese and the additional 1/4 teaspoon of black pepper. Bake 30-35 minutes until the tater tots are golden. Remove from the oven and crumble the cooked bacon over top. Let rest 5 minutes. Top with chopped chives or scallions and serve.
