- Preheat the oven to 350 degrees F (175 degrees C).
- Place the chicken in a shallow baking dish. In a medium bowl, stir together the salsa, brown sugar and mustard; pour over the chicken. Cover the dish with aluminum foil.
- Bake for 1 hour in the preheated oven, until chicken is cooked through. Remove the foil for the last 15 minutes to brown the chicken.

- Preheat large, nonstick sauté pan on medium-high 1–2 minutes. Place oil in the pan, then add the chicken; cook 3–4 minutes, stirring occasionally, or until chicken is browned. Add rice, corn, and tomatoes to pan; cook 2 minutes.
- Stir in spinach and beans; simmer 2–3 more minutes or until steaming and chicken is 165°F. Serve.
