Chocolate Covered Lebkuchen | Recipe | Cuisine Fiend image

Traditional recipe for chocolate covered lebkuchen or gingerbreads. Chocolate coated and with jam filling, they are soft and indulgent. And the fun of dipping cookies in melted chocolate is the spirit of Christmas!

Number Of Ingredients 11

250g plain flour
85g ground almonds
1 tsp mixed spice
1 tsp ground ginger
1 tsp cinnamon
1 tsp baking powder
1/2 tsp baking soda
300g set or 200ml runny honey
85g (6 tbsp.) butter
thick jam or marmalade
400g good quality cooking dark, milk or white chocolate (or make a mix but that's twice as much work of course)

Steps:

  • Mix all the dry ingredients: flour, almonds, baking powder, baking soda and the spices in a large bowl. Heat up the butter with the honey until it melts, let it cool a little and pour over the dry ingredients. Mix well into a sticky dough. Chill for at least an hour in the fridge.
  • Turn out the dough onto a generously floured surface, dust with more flour and roll out to about 5mm thickness. Dot the jam or marmalade on the bottom half of the pastry, at least 6-7cm apart. Gently fold the top half over the bottom half and cut around the jam mounds with a pastry cutter. Make sure the edges are well sealed and place the cookies on a baking tray lined with parchment.
  • Preheat the oven to 180C/350F/gas 4. Bake the Lebkuchen for 15 minutes and leave to cool still on the parchment sheets on a wire rack.
  • Tempering chocolate is not essential but it ensures better gloss, crispiness and easier coating. The simple method is to melt two thirds of the amount over a bain-marie (in a bowl set over a pan with simmering water); add the remaining third and stir continuously until it cools down to barely lukewarm (31C for dark, 27C for white); about 10 minutes. The chocolate will stay liquid long enough to dip all the Lebkuchen.
  • Coat the cookies with the tempered chocolate one at a time. The easiest way is to drop a cookie into the chocolate upside down, turn gently over with a small fork, then lift it with the fork and tap off the excess of chocolate against the rim of the bowl. You can also try scraping it off the bottom very gently with a knife. Set the cookie onto a tray lined with parchment.
  • When all are covered, leave them on the tray until the chocolate is completely set, best overnight. When set and dry, you can store the Lebkuchen in a biscuit tin for several weeks.

Steps:

  • Dry a bone-in, fully cooked half ham (do not use a country ham) and bring to room temperature. Preheat the oven to 375 degrees F. Trim the ham skin, leaving the fat intact. Score the fat in a crosshatch pattern, making the cuts about 3/4 inch deep and 1 inch apart. Put the ham flat-side down on a rack in a roasting pan; add 1 cup water. Bake on the lowest oven rack, 40 minutes, adding more water if the pan gets dry. Meanwhile, make the glaze: Whisk 1 cup jam or marmalade with 3/4 cup brown sugar, 1 cup dijon mustard, 2 tablespoons cider vinegar and 2 teaspoons Worcestershire sauce. Brush the ham with half of the glaze; cover loosely with foil and bake 45 more minutes. Brush with the remaining glaze and bake, uncovered, until the glaze is browned, 40 to 50 more minutes. Let rest 15 minutes before carving.
  • Don't toss your ham bone! Add it to simmering soups, beans or braised greens for extra flavor.
  • Give your ham a great crunch: Sprinkle one of the below mixes onto the glaze before the last 40 to 50 minutes of cooking.
  • Spring Herb Mix 1 cup panko (Japanese breadcrumbs), 3 tablespoons each chopped parsley and chives, and the grated zest of 1 lemon.
  • Cornmeal-Thyme Crush 1 cup cornbread stuffing mix; toss with 2 tablespoons chopped thyme, 1 1/2 teaspoons ground coriander and 1/2 cup cornmeal.
  • Spicy Sourdough Grind 3 cups cubed sourdough bread in a food processor; toss with 1 tablespoon chili powder and 1 bunch chopped scallions.

  • Even the best-made jams can go awry. They might scorch or develop mold, be too sweet or lose their seal, leaving you wondering what you’ve done wrong. Here are a few frequently asked questions – and their answers – to help guide you on your path to perfect jam.I don’t have enough blackberries. Can I add another fruit to substitute? If you’re short on the amount of fruit required for a recipe, you can add another. Purists may argue differently, but perhaps they’ve never tasted a peach-blackberry jam. When mixing and matching, it’s important to keep the same total amount of fruit (for example, if that peach-blackberry jam recipe calls for 4 pounds, supplement 3 pounds of blackberries with a pound of cut peaches) and continue with the recipe for the larger amount of fruit (here, blackberries). My jam won’t set. If you’ve been cooking your jam for the amount of time required and it’s still not setting, cook it a few minutes longer to evaporate some more of the water in the fruit. It’s also important to manage expectations. Some fruit with lower amounts of natural pectin, like strawberries, will never quite reach the same gel-like consistency as those with an abundance of it, like blueberries. My jam is too sweet. Throwing in an extra tablespoon of lemon or lime juice at the end can help, but avoid adding any more than that as it could make the jam runny. The seal on my jars has broken. If you notice the lid has popped without opening, it means the lid is no longer sealed and, as a result, is ineffective at keeping bacteria and mold at bay. Since most jams are stored where we cannot keep tabs on them, it’s hard to say how long a seal has been broken. Throw these jams away, just to be safe, though the jars themselves can still be reused, if sterilized. My jam has been canned for a few days but I’ve noticed it fizzing, forming bubbles or growing mold. Mold growth and accidental fermentation are two telltale signs of improper canning.
