Satisfying veggie bake | Jamie Oliver image

We all need extraordinarily tasty ways to get in the good stuff, and with five of your 5-a-day per portion, this dish makes me very happy.

Yield 8

Number Of Ingredients 17

3 onions
3 cloves of garlic
olive oil
3 level teaspoons ground coriander
3 teaspoons olive tapenade
3 mixed-colour peppers
3 sweet potatoes
3 large portobello mushrooms
3 courgettes
3 x 400 g tins of quality plum tomatoes
3 large free-range eggs
500 g Greek-style yoghurt
100 g feta cheese
1 bunch of oregano (20g)
1 packet of filo pastry (270g)
1 mug of basmati rice (300g)
1 x 400 g tin of butter beans

Steps:

  • GET AHEAD You can prep this on the day, if you prefer. Peel and finely slice the onions and garlic, and place in a large casserole pan on a medium heat with 1 tablespoon of olive oil, the ground coriander and tapenade, stirring regularly. Alongside, we’re going to lightly char our veg in a large dry non-stick pan on a high heat to intensify the flavour, so deseed the peppers, scrub the sweet potatoes, then chop into 3cm chunks with the mushrooms and courgettes. One veg at a time, lightly char all over, moving them into the casserole pan as they’re done. Add the tomatoes to the mix, breaking them up with a spoon, along with two tin’s worth of water. Simmer gently for 30 minutes, or until the sweet potatoes are soft. Season to perfection, tasting and tweaking, leave to cool, then cover. Meanwhile, beat the eggs into the yoghurt, roughly crumble and mix in the feta, then cover. Refrigerate both overnight. ON THE DAY Assemble the bake as your last prep job. Use half the oregano as a brush to coat the inside of a large roasting tray or baking dish with oil. Layer in all but one of the filo sheets, leaving an overhang and brushing with oil as you go. Evenly sprinkle in the rice, drain and scatter over the beans, then pour in your veggie stew. Scrunch over the remaining sheet of filo and fold in the overhang, brush the top with oil, then cover, until needed. TO SERVE Preheat the oven to 180°C/350°F/gas 4. Cook the bake on the bottom of the oven for 1 hour. Remove from the oven and use the back of a spoon to crack the top of the pastry, then spoon over the creamy topping. Pick the remaining oregano, rub in a little oil and sprinkle over, then return to the middle of the oven for another 40 minutes, or until golden. Great with a simple salad.

Learn to make authentic Neapolitan pizza dough easily at home with Jamie Oliver's fool-proof recipe, as seen on his Channel 4 series, Jamie Cooks Italy.

Yield Makes 6 pizza bases

Steps:

  • Cook time: 45 minutes, plus proving.

    Pour 700ml of lukewarm water into a large bowl with 10g of sea salt. Gradually mix in a small handful of the flour to break the water and start to turn it into a batter. Mix in the yeast and leave for 2 minutes. Gradually mix in 90% of the remaining flour until you have a pliable, soft dough. Tip the remaining flour on to a clean surface and knead the dough for 20 minutes, or until smooth and elastic (or 10 minutes in a free-standing mixer with a dough hook). Place in a floured bowl, cover with a clean, damp tea towel and prove for 1 hour, or until doubled in size. Knock out the air with your fists, roll into a sausage shape, chop into 6 equal pieces and roll each one into a ball, stretching the edges underneath. Place on an oiled tray, drizzle with oil, cover with clingfilm and the tea towel and prove overnight in the fridge (for better flavour and a more relaxed dough). 

    Preheat the oven to full whack (240C) and place a pizza stone inside. Use a fish slice to move one ball of dough on to a flour-dusted surface. Press the ball out into a flat round disc, then pick it up and gently turn and stretch it to 30cm in diameter, using gravity to help you. Stretch it over the back of your fists, then place it on a floured pizza paddle or board – the dough should be a little thicker around the edges. Pull it into shape and give it a jiggle so you know it's free-moving. Working quickly and with restraint, add your chosen toppings (see my favourites below). Quickly shunt onto your pizza stone and close the door to retain heat. Wait 7 or 8 minutes and it'll be golden, crisp and ready to eat.

    Classic Margherita (pictured above)

    The Neopolitans don't mess around – they keep their tomato sauce beautifully simple, raw and fresh, so buying quality tinned tomatoes is a must. Simply scrunch tinned San Marzano plum tomatoes in your clean hands until smooth, then spoon over your pizza base. Top with a few fresh basil leaves, some torn mozzarella cheese and finely grated Parmesan cheese. Drizzle with a little olive oil, bake, and finish with a few extra basil leaves. 

    Ricotta and Baby Courgette

    Spoon over tomato sauce (see recipe above), then top with ricotta cheese mashed with fresh marjoram leaves and finely grated Parmesan or pecorino cheese and lemon zest. Add baby courgettes tossed in olive oil and lemon juice, drizzle with a little more olive oil and bake.

    Grape and Honey

    Toss red and black grapes, fresh rosemary leaves and very finely sliced red onion in olive oil, then scatter over your pizza base with pine nuts, finely grated pecorino cheese, torn mozzarella cheese and a tiny drizzle of runny honey. Drizzle with a little olive oil and bake.

    Tomato and Rosemary

    Spoon tomato sauce (see recipe above) over your pizza base, then scatter over some fresh rosemary leaves tossed with a little olive oil. Tear over some spicy n'duja, finely grate over some Parmesan cheese, drizzle with a little more olive oil, and bake.

    Broccoli and Sausage

    Spoon tomato sauce (see recipe above) over your pizza base, then top with small blanched broccoli florets fried with garlic, fresh chilli, black olives (destoned) and sausagemeat. Tear over some provolone cheese, drizzle with a little olive oil, and bake.

  • 1. Put the rice, milk and salt into a heavy-based saucepan – I use one of 18cm diameter – and finely grate the zest of the lemon into it. Over high heat, and stirring regularly, bring to the point where it looks like it’s just about to boil, though do not let it actually boil. Turn the heat down to low, and continue to cook the milk and rice for about 30 minutes, stirring every now and then, until the rice is cooked and the milk is absorbed. Keep an eye on it, as you don’t want the milk to start boiling, nor do you want the rice to stick to the bottom of the pan.

    2. Take the pan off the heat, and stir in the 75g of butter until melted. Scrape the contents of the pan into a bowl large enough to take all the remaining ingredients. Leave for about 1 hour to cool. Once it’s at room temperature, you can move on, so heat the oven to 160ºC/140ºC Fan, and butter a 20cm springform cake tin.

    3. Separate the eggs, letting the whites fall into a large grease-free bowl (which could be the bowl of a freestanding mixer) and drop the yolks into a wide measuring jug (or a bowl). Whisk the whites until stiff, and set aside for a moment. Add the sugar to the yolks, and whisk – I use a balloon whisk with vigour, rather than an electric one here – until pale and moussy.

    4. Add the vanilla extract and 2 teaspoons of juice from the zested lemon to the yolks and sugar, and then pour gradually into the cooled rice, folding it in well as you go.

    5. Dollop a large spoonful of the stiffly whisked whites into the rice bowl and stir briskly to lighten the mixture, and then fold in a third of the remaining whites gently but thoroughly, then another third, and when that’s incorporated, fold in the rest. Pour and scrape this mixture gently into the prepared tin.

    6. Grate nutmeg over generously and bake for 45 minutes; by then the top will have set, with no hint of wobble underneath.

    7. Sit on a wire rack for about 1 hour, until it’s just slightly warm. To ease the unmoulding, slip a small spatula all around the edges, unclip the tin, and transfer the cake, still on its base (unless, like me, you don’t mind risking damage trying to remove it), to a flat plate.

    8. Serve each slice drizzled with a little of the glistening sauce mentioned in the recipe intro, or with the rhubarb compote on p.127 of Cook, Eat, Repeat when in season.

    Store: Refrigerate leftovers, covered, for up to 3 days. Must be refrigerated within 2 hours of baking. Eat cold.
