2 lb. russet potatoes
1 1/2 tsp. salt
1/2 c. half-and-half
1/2 c. milk
4 tsp. unsalted butter
1/2 tsp. fresh-ground pepper

Steps:

  • Bring the potatoes, 1 teaspoon salt, and enough water to cover to a boil in a large saucepan. Cook the potatoes until just tender -- about 20 minutes. Drain the potatoes, return them to the saucepan, and use a potato masher or a fork to mash them slightly. Stir in the half-and-half, milk, butter, remaining salt, and pepper and serve immediately.

1 cup buttermilk

Steps:

  • Place potatoes in a soup pot with just enough water to cover. Place lid loosely on pot, bring to a boil over high heat, and cook 20 to 25 minutes, or until fork-tender. Using the lid, drain potatoes and place pot back on heat 1 minute to make sure all water is gone.
  • Add remaining ingredients; beat with an electric mixer until smooth and creamy. Serve immediately.
