just a little something different. prep time doesn't include rising time. In the directions I didn't specify kneading. there are 2 schools of thought on this subject. I leave that up to your personal preference. I knead this type of bread but i've know people who don't. As long as the bread gets a good double in size rise you should have good results. You can either use dried herbs or fresh. I prefer fresh but have had good results with the dried. Just remember dried herbs tend to have a more concentrated flavor so you may what to cut back on the amount a bit if using dried herbs.

1/4 ounce dry active yeast
1/4 cup warm water
2 teaspoons chives, minced
1 tablespoon butter, softened
1 teaspoon salt
1 teaspoon oregano
1 cup cottage cheese, small curd
2 tablespoons sugar
1 egg
2 -3 cups flour, sifted

Steps:

  • soften yeast in warm water.
  • bring butter, cheese and egg to room temperature mix all ingredients except flour. add yeast to this mixture and mix well.
  • gradually add enough flour to make a firm dough.
  • cover and let rise 1 hr or until doubled.
  • punch down and put in a well buttered 1 1/2 qt casserole. cover and let rise 30 minutes.
  • bake at 350 degrees F for about 40 minutes.
  • turn out and brush with butter and sprinkle with coarse salt. serve warm or cold.

all purpose flour
whole wheat flour

Steps:

  • 1. Preheat oven to 350°F.  2. Prepare your 8-inch loaf pan. Brush the melted butter in the loaf pan and coat generously. Sprinkle three tablespoons of sugar to coat the inside of the pan as well. Shake out the excess sugar and set the loaf pan aside. 3. Place sunflower seeds on a cookie tray and toast for seven to eight minutes in the oven until golden brown. Remove from the oven and allow to cool to room temperature. 4. Combine all of your dry ingredients including the cool, toasted sunflower seeds in a large mixing bowl and whisk together to evenly combine.  5. In a separate large mixing bowl, whisk together the canola oil, cottage cheese, eggs, and mashed bananas. Stir to evenly combine. 6. Whisk the wet ingredients into the dry ingredients to form a stiff batter, (the batter will look stiffer than a typical cake batter however the banana bread has plenty of moisture in it). 7. Place the batter into the prepared loaf pan. Bake at 350 degrees for approximately 45-60 minutes or until well-risen, golden brown, and when touched the bread lightly springs back. 8. Cool the bread in the pan for 20 minutes before removing it from the pan, cooling it in the pan first is important because it gives a chance for the bread’s structure to firm up and set. If it’s handled too soon while it is still hot, the bread will crumble and you’ll be left with a big pile of banana bread crumbs. 9. After 20 minutes, remove the banana bread from the pan and continue to cool on a wire rack until room temperature. **Note: This cake is best eaten the day it is made, however if it's wrapped well, it will last for up to three days. Due to the oil, cottage cheese and mashed banana, this bread will stay moist as long as it is wrapped well. This bread is also delicious when it is lightly toasted, served with your favorite jam, enjoyed with a hot cup of coffee or tea or enjoyed in the company of good friends and family.

  • In a small plastic bowl add a pinch of sugar, the water (105-115 degrees) and the yeast, stir to combine. Let yeast proof 8-10 minutes. If it doesn't bubble up, water was too hot, or not hot enough. Start over. If it's good to go, add all other ingredients, except flour. Add 2 cups of flour, stir. You want a somewhat firm dough, and not wet, or tacky. Add small amounts of flour until dough is firmed up. Form a ball. Cover and let rise one hour or until doubled in size. Punch down. Butter a 2 quart round casserole dish, or 4 mini aluminum bread baking pans. Place dough in it/them, cover, and let rise 30 minutes. Heat oven to 350 F. Bake for 25 minutes and begin checking for doneness. Bread will rise and turn golden brown on top. Casserole- When done, cool a bit, gently work around the edges with a knife to loosen bread, turn out, brush with butter, and sprinkle top lightly with coarse salt and pepper. Cut in 8 pieces, or or wrap whole in brown paper to keep it moist. Loaf - brush with butter, salt, pepper. Cut and serve and wrap leftover bread in paper bags. Best served warm. To store this bread a day or so, place it in a paper bag, when completely cooled. Remove and re-heat uncovered in a 300 F oven for 10 minutes. Do not microwave. It only dries out any bread.
