BLACKENED CORVINA (SEA BASS) RECIPE | MYRECIPES

Blackened Corvina (Sea Bass) Recipe | MyRecipes image

From www.livestrong.com Corvina is known for its white, tender and flaky meat. It is a versatile fish, which can go in many different preparations. White corvina - also called white seabass, corvina blanca or king croaker - is a member of the Sciaenidae family. Corvina steaks are thicker than fillets and hold up well to a rubust spice mixture. Blackening the corvina is a wonderful method for the fish as the smokiness of the grill adds to the fish's delicate flavor.

Total Time 40 minutes

Prep Time 15 minutes

Cook Time 25 minutes

Yield 4 servings

Number Of Ingredients 9

2 tablespoons paprika
1 tablespoon garlic salt
1 tablespoon dried thyme
½ teaspoon ground black pepper
½ teaspoon ground red pepper
3 tablespoons butter or Olive Oil
4 corvina sea bass steaks 4-6 oz each
1 lemon cut into wedges
fresh dill sprig minced

Steps:

  • Step 1: Preheat your grill to medium heat
  • Step 2: Combine paprika, garlic salt, thyme, black pepper and red pepper to create a spice rub.
  • Step 3: Melt the butter and pour into a bowl. (I use half butter & half olive oil)
  • Step 4: Dip each piece of fish in the butter, then sprinkle if with the spice mixture.
  • Step 5: Place the fish on well oiled grill (on a grill pan) and grill the fish steaks for 3-4 minutes, covred with a lid. Turn the fish with a spatula then cook for 3-4 minutes on the other side. (I personally found cooking times to be ~25 minutes overall.)
  • Step 6: Serve each blackened corvina steak with a sprinkle of dill over the top and accompanying lemon wedge.
  • Notes:
  • To reduce the amount of saturated fat in this dish can use any 3 Tbsp combination of butter and olive oil. Corvina is high in protein, but very low in fat.
  • To reduce the spiciness of the dish, omit the ground red pepper. To make it hotter, increase the amount of red pepper to 2 tsp.
  • Be sure to use corvina while fresh; this type of fish spoils quickly.

CORVINA A LA CHORILLANA (PERUVIAN FISH IN SPICY TOMATO ...

Corvina a La Chorillana (Peruvian Fish in Spicy Tomato ... image

Corvina is similar to sea bass. You can use any firm white fish in this dish. You can also substitute 1 1/2 drained, chopped canned tomatoes for the fresh. Adapted from Time/Life Foods of the World.

Total Time 30 minutes

Prep Time 10 minutes

Cook Time 20 minutes

Yield 6 serving(s)

Number Of Ingredients 9

3 tablespoons annatto oil, divided (see note)
2 large onions, thinly sliced, divided
3 large tomatoes, peeled and chopped, divided
2 fresh hot chili peppers, seeded and cut into 1/8-inch strips, divided (red or green)
1/2 teaspoon finely chopped garlic, divided
1/2 teaspoon dried oregano, divided
1 teaspoon salt, divided (or to taste)
1/4 teaspoon fresh ground black pepper, divided
3 lbs sea bass (cut into 1/2-inch steaks)

Steps:

  • Heat 1 tablespoon annatto oil in a heavy 4-quart pot over moderate heat, tipping pot to spread oil across the bottom.
  • Spread half the onion slices, tomatoes, and chili strips in the hot oil.
  • Sprinkle with half the garlic, oregano, salt and pepper.
  • Lay fish steaks on top of vegetable mixture.
  • Cover with remaining vegetables and seasonings.
  • Drizzle remaining annatto oil over top.
  • Cover and simmer over low heat until fish is opaque and firm, 20-30 minutes. Do not overcook.
  • NOTE: to make annatto oil, heat 1/2 cup vegetable oil in a saucepan over moderate heat. Stir in 1/4 cup annatto (achiote) seeds. Stir for 30 seconds. Reduce heat to low, cover and simmer for 10 minutes. Remove from heat, cool, and strain. This will keep several months if tightly covered and refrigerated, but it will lose flavor as it ages.

BAKED CORVINA – FELICIA TOTH
As a proud Peruvian I love my seafood. Corvina is the king of all fish in my opinion. Corvina is a firm white fish that flakes when cooked. It's the fish of choice to make ceviche. Peruvian waters have been blessed with a richness of fish and seafood that could turn the staunchest carnivore into a pescatarian. Trust me when Covid is over you must visit Peru for a culinary food feast. Feel free to ask me for restaurant recommendations.

CORVINA TRADITIONAL RECIPE | EPICURIOUS
This recipe epitomizes what a great ceviche should be—crunchy, sweet, savory, tart, and rich all in one bite. Corvina, a type of sea bass, is the most widely used fish in South America for ceviche, and is very forgiving for the novice. Its firm, lean flesh holds up better to acid and is easy to either thinly slice or dice. The combination of sweet potato and raw marinated fish is common in Peru, although there the potato might be roasted whole, sliced, and served fanned at the edge of a plate of ceviche similar to this crunchy, tart version. As you eat the marinated fish, pull away bites of sweet potato from the edge of the dish and enjoy both components at once. Don't be swayed to leave out the sweet potato garnish—you must try both the tart, firm fish and the potato in the same bite to really understand and savor how they work together. Leftover sweet potatoes make a great side dish for spicy foods.

  • Transfer the ceviche to individual glasses or a large shallow bowl. Place about 1 cup of the candied sweet potatoes on the sides of the glasses or bowl and top with the cilantro leaves. Serve immediately.
