Steps:
- Combine soy sauce, teriyaki sauce, honey, lemon juice, garlic, black pepper, and ginger in a large resealable plastic bag. Add Cornish hens. Seal and marinate in the refrigerator for 8 hours.
- Preheat oven to 400 degrees F (200 degrees C). Grease a metal rack and set inside a roasting pan.
- Transfer hens from the plastic bag to a flat work surface; tie legs together with kitchen twine. Place hens on the prepared rack.
- Pour marinade into a small saucepan; bring to a boil. Remove from heat.
- Roast hens in the preheated oven, basting occasionally with marinade, until juices run clear, about 1 hour. Cover loosely with aluminum foil. Continue roasting until an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 15 minute more.
- Cover hens with aluminum foil. Let rest for 5 minutes before serving.

Asian influenced flavor. Another recipe from Big Daddy's House on the Food Network. Everything he makes looks SO delicious! I can't wait to try this! On the show, he only prepared one Cornish hen, so adjust your times accordingly for multiple hens. Cooking time includes deep-frying and baking time.

Steps:
- Pre-heat oil in a pot large enough to fit a Cornish hen comfortably, to about 350 degrees.
- Thoroughly wash and pat Cornish hen dry to avoid unnecessary spatter, and carefully ease into hot oil.
- Cook for 8-10 minutes on each side until you see that it is turning slightly golden brown around the edges and crispy.
- Remove and place on cooling rack.
- In a small bowl, prepare glaze by mixing together first 4 ingredients, adding red pepper flakes to your heat preference. Baste entire hen liberally with the glaze.
- Pop in pre-heated oven at 350 degrees for about 8 minutes or until it gets crispy.
- Flip over, and re-baste bottom of hen, and put back in oven for another 8 minutes to crisp up the other side.
- Let rest before serving. You can cut into quarters for 2 servings, or serve whole.
- Serve alongside steamed veggies and/or Jasmine rice for a complete meal!

- Light a grill and oil the grates. Drain the hens. Using poultry shears, cut the hens in half. Pat the hens dry. Brush with oil and arrange on the grill. - In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear.
