Peppered Cornbread Recipe: How to Make It image

1-1/2 cups cornmeal
1 tablespoon all-purpose flour
1 tablespoon sugar
2-1/4 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
2 large eggs, room temperature, lightly beaten
1 can (8-1/4 ounces) cream-style corn
1 cup buttermilk
2/3 cup vegetable oil
2 cups shredded cheddar cheese
1 medium sweet red pepper, chopped
2 jalapeno peppers, seeded and diced
4 to 5 green onions, chopped

Steps:

  • In a large bowl, combine the cornmeal, flour, sugar, baking powder, salt and baking soda; set aside. In a small bowl, combine the eggs, corn, buttermilk and oil; stir into the dry ingredients just until blended. Fold in the cheese, peppers and onions. , Pour into a greased 13x9-in. baking dish. Bake at 350° until a toothpick inserted in the center comes out clean, 30-35 minutes. Cut into squares; serve warm.

1 cup all-purpose flour
1 cup cornmeal
2 - 4 tablespoon sugar
1 tablespoon baking powder
½ teaspoon salt
2 beaten eggs
1 cup milk
¼ cup cooking oil or shortening, melted
½ cup shredded Monterey Jack cheese with chili peppers
¼ cup finely chopped green sweet pepper
¼ cup finely chopped red sweet pepper

Steps:

  • Grease the bottom and 1/2 inch up the sides of an 8x8x2-inch baking pan; set aside. In a large mixing bowl, stir together the flour, cornmeal, sugar, baking powder, and salt; set aside. In a medium mixing bowl combine the eggs, milk, and cooking oil or melted shortening. Add egg mixture all at once to dry mixture. Stir just until moistened. Stir in cheese and the peppers. Spoon batter into the prepared pan.
  • Bake in a 425 degree F oven for 20 to 25 minutes or until a wooden toothpick inserted near the center comes out clean. Cool on a wire rack. Makes 8 or 9 servings.
