THIS MEXICAN CORNBREAD CASSEROLE IS YUMMY...GREAT FOR A POTLUCK OR A HURRY UP AND MAKE DINNER.

Ingredients

2 box(es) cornbread mix
1 pound(s) ground beef
1 small can chopped greeen chilies
1 package(s) taco seasoning mix
1 can(s) regular corn
1 can(s) creamed corn
1 1/2 cup(s) cheddar cheese, shredded

Steps:

Brown ground beef add taco seasoning per package directions; add green chilies; set aside.
Mix cornbread per package directions; to corn bread add 1/2 can creamed corn and 1/2 regular corn add 1/2 of cornbread mixture in bottom of 9x13 pan.
On top of cornbread put meat mixture, remaining can of corn and cream corn over that; add 1/2 of cheese.
Top remaining cornbread mixture and cheese all over the top. Bake at 350F for 35-40 minutes.
Let set 5 minutes. Cut into squares. Serve with sour cream, lettuce, guacamole , tomatoes or whatever you like.

Ingredients

1 lb ground meat
1 onion, chopped fine
1/2 lb cheddar cheese, grated
3 jalapenos, chopped
1 cup cornmeal
2 eggs beaten
1 cup milk
1/2 tsp baking soda
3/4 tsp salt
1 (15 oz) can whole kernel corn drained
1/4 cup oil for cornbread

Steps:

In a medium pan add a small amount of oil cook the meat about 10 to 15 minutes until brown. Drain and set aside.
In a large mixing bowl, combine the cornmeal, baking soda, and salt. Add eggs and milk and stir until blended. Add the oil and stir well. Then add the drained corn and peppers.
Grease a 9x9 casserole dish. Layer 1/2 of the cornmeal mixture on the bottom of the dish, then the browned ground meat, the uncooked onion, followed by the cheese,and top with the remaining cornmeal mixture.
Bake at 425 degrees 20 minutes until brown or until toothpick comes out clean.
Method 2 - (Picture version) Grease a 9x9 casserole dish. Layer 1/2 of the cornmeal mixture on the bottom of the dish, then the browned ground meat, the uncooked onion, and top with the remaining cornmeal mixture. Bake at 425 degrees 20 minutes until brown or until toothpick comes out clean. Remove from oven and immediately top with the cheddar cheese, place back in oven to finish melting the cheese.

In a large bowl, mix together the corn muffin mix with about 1 1/2 cups milk, or just enough to make it easy to spread. Spread it thinly over the chili mixture. Bake until browned to top, 30 to 35 minutes. Remove from the oven and set aside for 10 minutes to allow the casserole to set. Top with the Cheddar and sour cream before serving.

Preheat oven to 400°. In a Dutch oven, cook beef over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Stir in taco seasoning. Add tomatoes, water, rice and green chiles; heat through, stirring occasionally., Meanwhile, prepare cornbread mix according to package directions; stir in corn. Pour half of the batter into a greased 13x9-in. baking dish. Layer with half of the meat mixture, all the sour cream, half of the corn chips and 1 cup cheese. Top with remaining batter, remaining meat mixture, olives and remaining corn chips., Bake, uncovered, until cornbread is cooked through, 55-60 minutes. Sprinkle with remaining cheese; bake until melted, 3-5 minutes longer. If desired, serve with lettuce, tomatoes and red onion.
