EASY TUNA CASSEROLE – INSTANT POT RECIPES
Classic weeknight fare, this easy, cheesy tuna casserole (studded with the traditional green peas) is comfort food at its finest, including the (optional) potato chip topping.

Steps:
- Place pasta and onion powder in the Instant Pot. Add water and stir to combine.
- Layer tuna, frozen peas, and soup evenly on top of pasta--do not stir.
- Secure the lid, making sure the vent is closed.
- Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 4 minutes.
- When the time is up, quick-release the pressure.
- Add cheese and stir until melted.
- Optional: Transfer the mixture to a baking dish and cover with crushed potato chips. Place under the broiler for 2-3 minutes.

Steps:
- In a blender or mortar, blend or pound garlic, salt, peanuts, chilies, sugar and shrimp (if using) into a paste. Transfer to a large bowl and mix in lime juice and fish sauce. Use a spoon (or the mortar) to lightly crush tomatoes and beans (if using), then add to bowl and mix lightly.
- Peel and coarsely grate or shred papaya, discarding seeds and inner membrane. There should be 4 to 6 cups.
- Add papaya to bowl and lightly but thoroughly toss together. Taste for seasoning. Mound in a bowl (if desired, line bowl with lettuce leaves beforehand). Sprinkle with peanuts and serve.
