I was making a spanish themed dinner the other night and came up with this corn dish that went very well with my meal. My husband told me I should post this on recipezaar. So her it is. Enjoy

1 (15 1/4 ounce) can corn (drained)
2 tablespoons butter or 2 tablespoons margarine
1 whole tomatoes (diced)
1/4 cup chopped green onion
1/8 cup chopped fresh cilantro

Steps:

  • melt butter in medium saucpan.
  • add rest of ingredients.
  • simmer on low for 10 minutes.

2 (15.25 ounce) cans whole kernel corn, drained
1 (8 ounce) package cream cheese
¼ cup butter
10 jalapeno peppers, chopped
1 teaspoon garlic salt

Steps:

  • In a medium saucepan combine corn, cream cheese, butter, jalapeno peppers and garlic salt. Cook over medium heat for about 10 minutes or until heated through, stirring constantly after cream cheese begins to melt.

  • Place chorizo, corn, and jalapeño in a medium nonstick skillet over medium-high. Cook, stirring often, until corn is crisp-tender, about 3 minutes. Remove from heat. Combine flour, sugar, baking powder, and baking soda in a bowl, stirring with a whisk. In a separate bowl, whisk together buttermilk and 1 egg. Add buttermilk mixture and chorizo mixture to flour mixture, mixing until just incorporated. Gently stir in butter. Let stand 5 minutes. Preheat an electric griddle to 350°F, or heat a nonstick skillet over medium-high. Lightly grease griddle or skillet with cooking spray. Spoon about 2 1/2 tablespoons batter for each of 16 cakes onto griddle; gently spread into 3-inch rounds using back of spoon. Cook until golden brown, 2 to 3 minutes on each side. Remove from pan and keep warm, or follow freezing instructions. This is my mom's Puerto Rican comfort soup. The mix of vegetables and herbs is an influence of the Spanish Canary Island ancestors of some Puerto Rican families. The soup was adjusted to the vegetables available in Puerto Rico by the addition of corn and pumpkin. In the Canary Islands of the 1700s, corn was only fed to farm animals! In Puerto Rico, some cooks now add ginger root, chile pepper, cumin, and other ingredients but I believe it destroys the original rich natural vegetable taste. Similar Spanish sancocho recipes were passed on to other Spanish colonies such as Columbia. Serve hot with bread to soak up the delicious flavor.
