Baked chicken cordon bleu has a fancy reputation, but this recipe couldn't be any easier. Tender chicken breasts are stuffed with chopped ham and shredded Swiss cheese and topped with butter-coated Italian-style breadcrumbs. This easy chicken cordon bleu will taste like it comes from your favorite restaurant but is served up right at your family's dinner table.

4 large boneless skinless chicken breasts (1 1/4 to 1 1/2 lb)
1/2 cup shredded Swiss cheese (2 oz)
1/2 cup finely chopped ham (2 oz)
3 tablespoons butter, melted
3/4 cup Progresso™ Italian style panko crispy bread crumbs

Steps:

  • Heat oven to 375°F. To form pocket in each chicken breast, cut 3-inch-long slit in thick side of each breast, cutting into breast about 2 inches and to within 1/2 inch of opposite side.
  • In small bowl, mix cheese and ham. Spoon evenly into pockets in chicken; secure openings with toothpicks.
  • Place melted butter in shallow dish. Place bread crumbs on large plate. Dip each stuffed chicken breast into butter; roll in bread crumbs to coat. Place in ungreased 13x9-inch (3-quart) glass baking dish. Sprinkle any remaining bread crumbs over chicken.
  • Bake 28 to 32 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F). Remove toothpicks before serving.

This classic dish features chicken breasts stuffed with thin slices of ham and cheese that are then coated in breadcrumbs and pan-fried. To avoid tearing the meat, pound it with a glancing (diagonal) motion rather than straight down, working from the center of the breast to the edge.

4 skinless, boneless chicken breasts (about 1½ lb. total)
Kosher salt, freshly ground pepper
4 thin slices ham or prosciutto (about 4 oz. total)
4 thin slices Gruyère or Swiss cheese (about 4 oz. total)
¾ cup dry breadcrumbs
¼ cup finely chopped parsley (from about ¼ bunch)
1 large egg
½ cup all-purpose flour
3 Tbsp. neutral oil (such as grapeseed or vegetable)

Steps:

  • Place a rack in middle of oven; preheat to 375°. Trim any fat around edges of chicken. Working one at a time, place chicken between sheets of parchment paper and pound with a mallet or rolling pin until about ¼" thick. Season chicken all over with salt and pepper.
  • Arrange chicken smooth side down on a work surface. Cover one half of each breast with one slice of ham and one slice of cheese, leaving space around the edges. Fold breast in half over ham and cheese and press edges together to firmly seal.
  • Combine breadcrumbs, parsley, 1 tsp. salt, and ½ tsp. pepper in a shallow bowl. Whisk egg and 1 Tbsp. water in another shallow bowl. Spread flour on a plate.
  • Press both sides of chicken in flour, shaking off any excess, then dip both sides into egg mixture. Coat all over with breadcrumb mixture, patting with your fingers to adhere. Transfer to a plate.
  • Heat oil in a large heavy skillet over medium-high until shimmering. Cook chicken, turning occasionally, until browned on all sides, 2–3 minutes per side. Transfer to a wire rack set in a rimmed baking sheet; season with salt. Bake chicken until an instant-read thermometer inserted into the thickest part registers 165°, about 5 minutes.
