FROZEN BREAKFAST BURRITOS RECIPE BY TASTY

Here's what you need: bacon, sausage, baby red potato, red bell pepper, yellow onion, salt, pepper, eggs, shredded cheese, green onion, flour tortilla, parchment paper

Yield 6 burritos

Number Of Ingredients 12

sausage
1.5 lb baby red potato, quartered
1 red bell pepper, chopped
1 yellow onion, chopped
salt, to taste
pepper, to taste
10 eggs, beaten
1 bag shredded cheese
1 bunch green onion, sliced, optional
flour tortilla
parchment paper

Steps:

  • In a large skillet over medium heat, cook bacon (in batches if necessary) until crispy. Remove the bacon to a paper towel lined plate - leave to cool.
  • In the same skillet - using leftover bacon grease (drain some if necessary) add the potatoes and season with salt and pepper. Once lightly browned add in peppers and onion. Cook until potatoes have browned and the peppers and onions have softened. Remove from pan and place in bowl to cool.
  • In the same saucepan, cook sausage until browned and cooked through. Remove to a paper towel lined bowl.
  • Reduce heat to medium/low and pour beaten eggs into the skillet. Fold and stir eggs occasionally until cooked but still soft and moist. Remove from pan.
  • While cooked ingredients are cooling slightly, gather flour tortillas, shredded cheese and sliced green onions (optional) and set them out on your table/workspace.
  • To assemble the burritos, lay out a tortilla and start with a base of eggs followed by desired toppings and finish with cheese.
  • To wrap, fold in both sides and then fold the bottom up and over all the ingredients. Roll up tightly.
  • NOTE: If you find the tortillas are tearing, heat them up - a few at a time - for 20 seconds in the microwave before assembling.
  • Wrap up in parchment paper. Place the parchment-wrapped burritos in a 1 gallon freezer bag and place in the freezer to store for up to one month.
  • To Reheat: Remove the frozen burrito from the freezer. Unwrap from parchment paper and wrap the frozen burrito up in a damp paper towel. Place on a microwave safe plate and microwave for 3 minutes.
  • Remove from microwave and rest for one minute before unwrapping. Remove the paper towel, serve with hot sauce, salsa, or sour cream!

A smoked Thanksgiving turkey recipe with seasoned real butter stuffed under the skin, rubbed onto the skin and then brushed on while it cooks in the smoker.

12-14 lb turkey*
3 sticks of butter ((¾ lb))
1/2 cup Jeff's original rub
Turkey brine recipe

Steps:

  • Thaw turkey in fridge 2-3 days before needed.
  • Remove turkey from package and remove giblets, neck, etc from cavity and set aside.
  • Remove and discard popup timer
  • To a medium pot add 1 quart of water, 1 TBS of course ground black pepper, 1 TBS of red pepper flakes, 2 long sprigs of thyme, 2 long sprigs of rosemary and 8-10 garlic cloves smashed with the side of a knife.
  • Bring to a boil then remove it from the heat and let it steep covered for 20-30 minutes.
  • Place the mixture in the fridge for several hours to cool.
  • To make the brine, add 3 quarts of cold water to a gallon sized pitcher and 1 cup of kosher salt.
  • Stir the mixture until the salt is dissolved.
  • Add the cooled mixture from the fridge into the brine and stir to combine.
  • Place the turkey into a brining container and pour the brine over the turkey to cover and then into the fridge for 8-10 hours.
  • After brining is complete, rinse the turkey under cold water.
  • Pat the turkey dry with a paper towel and set aside.
  • Mix 3 sticks of softened butter with 3 heaping tablespoons of Jeff's original rub to create the rub butter mixture.
  • Stuff 1/3 of this mixture under the loosened skin of the breast on both sides.
  • Rub 1/3 of the rub butter mixture onto the outside of the turkey breast, legs, wings and back.
  • Season the outside of the turkey generously with Jeff's original rub.
  • Setup smoker for cooking at 240°F with indirect heat.
  • Place turkey on smoker grate and cook until internal temperature of breast reaches 162°F.
  • Brush with remaining rub butter (melted) a couple of times during the last hour of the cooking process.
  • Remove from heat and rest turkey under foil for 20 minutes.
  • Carve and serve.

  • Preheat oven to 350°. Add the sugar and oil to the bowl of a stand-up mixture with a paddle attachment. Beat on medium speed until well mixed. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla.   In a medium bowl, combine the flour, baking soda, cinnamon, pumpkin pie spice, and salt. Add one-third of the flour mixture to the wet mixture, then mix to combine. Add one-half of the pumpkin puree, then mix to combine. Repeat with the flour mixture, more pumpkin, then finishing with flour, mixing well between each addition until the batter is smooth.  Spray the inside of a 12-cup bundt pan with non-stick baking spray with flour, then pour the batter into the pan. Place a folded kitchen towel on the counter and tap the pan (use some force!) on the towel 8-10 times (to remove any air bubbles in the batter). Bake 60 to 65 minutes or until a wooden pick inserted into the center comes out clean. Let cool in the pan for 10 minutes then place a wire cooling rack over the pan and flip to remove the cake. Let cool completely. For the Caramel Glaze:  In a medium saucepan, add the milk and sugar and cook over medium-low heat until it comes to a boil, stirring constantly. Reduce the heat to low and simmer for 8 minutes, stirring frequently. Remove from the heat and strain through a fine mesh strainer. Stir in the butter and vanilla. Let cool for 10-12 minutes, stirring frequently. The icing is ready when it makes thick ribbons when drizzled (it will still be warm). Drizzle it all over the cake. Let the glaze cool completely before cutting.
