Tangy baked salmon recipe. I use Tropicana Orange Juice. Sometime mix orange juice and lemon juice to give a more tangy flavor.

Ingredients

2 salmon steaks or 2 salmon fillets
1 teaspoon butter
10 tablespoons orange juice (with pulp)
salt
ground pepper
1 dash oregano (optional)
1 dash sugar (optional)

Steps:

Pre-heat oven at 350 degrees.
Grease a baking dish lightly with butter.
Clean and pat dry the Salmon Steaks or Fillets.
Rub salt on both sides (not necessary on the skin-side).
Place salmon pieces in the baking dish in a single layer.
Make deep cuts in the salmon pieces, dab some butter into the cuts and also dab a few bits of butter on the rest of the salmon.
Pour orange juice all over the fish.
Sprinkle pepper, oregano and for those who like a dash of sweet taste, sprinkle some sugar which will caramalize.
Bake until the salmon flakes.

Ingredients

2 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup butter
1 cup sugar
2 eggs, beaten
3/4 cup strained orange juice
1 cup shredded coconut, finely cut

Steps:

Combine flour,soda and salt and sift 3 times.
Cream the butter until it is light and lemon colored,add sugar gradually,beating after each addition.
Add beaten eggs slowly to creamed mixture.
Alternately add sifted ingredients and orange juice,beating until smooth after each addition.
Add coconut.
Drop by teaspoonfuls onto ungreased baking sheets.
Sprinkle with coconut if desired.
Bake at 400 for 10-12 minutes.
Cool.
