1 teaspoon olive oil
2 large eggs 
Toast, for serving, optional
Kosher salt and freshly ground black pepper 

Steps:

  • Heat the oil in a medium nonstick skillet over low heat until slightly shimmering, about 5 minutes. Crack an egg into a small ramekin and slowly add it to the skillet; repeat with the other egg, adding it to the other side of the skillet. Cover with a tight lid and cook, uninterrupted, until the whites are completely set but the yolks are still runny, 2 to 2 1/2 minutes. Slide the eggs out of the skillet onto a plate or toast. Season with salt and pepper.

Making the perfect sunny-side up eggs requires some trial and error. Luckily, Ree's recipe comes out perfect every time thanks to her helpful hacks.

Steps:

  • Heat some canola oil in a non-stick skillet over medium heat (not too hot!). There should be just enough oil to just cover the edges of the egg when it’s cracked in the pan.  Once the oil is mildly hot, crack in 3 eggs, one at a time. (Note: work in batches—three eggs are about as many as I can tend to at a time.) The whites should remain clear for several seconds before they start to turn white. Once the eggs begin to turn white, use a small spoon to carefully spoon the hot oil over only the whites of the eggs (avoiding the yolks). This will help the whites cook slowly so the top will set but still look pretty. *Important: Don’t spoon any oil over the yolks yet! Only spoon oil over the whites for now to prevent the eggs from turning cloudy. After a minute or two of cooking, once the whites are set/not jiggly and loose, carefully spoon the oil over the yolks. Continue spooning the oil over the eggs until they appear to be the doneness you want.  Remove the eggs from the pan with a slotted spatula, then drain them briefly on a paper towel before serving.

These are really fun to make, if a little messy. A splatter screen would be a worthwhile investment if this is your egg style of choice. We use plenty of oil here. You don't eat it all, but an abundance of hot oil gives the whites those delicious crisp, brown edges. Also, at higher temps, whole butter could scorch. You'll get slightly better results from a cast-iron pan than a nonstick pan, but as long as the pan and oil are hot enough, either will work.

I love the yolky, glossy cheeriness of a sunny-side-up fried egg, but when you’re ordering them at a diner, there’s almost no avoiding the (horrible, horrible) jellyfish blob of uncooked egg white that sits on top of the more cooked white next to the yolk. So how to solve the sunny-side-up egg problem, achieve the balance of a just-cooked-but-not-rubbery white with a still-runny yolk without sacrificing the sunniness and just going over easy? It is simpler than you might think, and it takes nothing but a few drops of water and a tight-fitting lid. Yep—it’s steam that helps sunny-side-up eggs become their most perfect selves. If you’ve ever pan-fried dumplings, you’ll recognize the technique. First, you get a bit of a browned crust on the bottom of the thing, to give it additional texture and flavor. Then, you add a little water to create steam, which gently warms it through without overcooking it.To make a sunny-side-up egg, coat a frying pan thinly with olive oil and get it really hot. When the oil gets loose and shiny, crack an egg in. It should respond immediately to the oil, and the white will begin bubbling. This all happens fast, so watch the egg carefully. The edges of the white will begin to look opaque and maybe start to crisp. When they do, run your fingers under the kitchen faucet and flick a few drops of water off your fingertips and into the pan. The oil and the water do not want to be together, and will hiss and pop unhappily. No matter! Quickly cover the egg up with the lid and keep an eye on it.
