Cook Time 0S

Yield 8 servings

Number Of Ingredients 16

1

loaf rustic bread, cut into 1/2-inch cubes (about 12 cups)

1/2 c.

(1 stick) butter, cut into pieces

1

large yellow onion, chopped

2

celery stalks, chopped

3 Honeycrisp apples, chopped into 1/4-inch to 1/2-inch pieces

Kosher salt

Freshly ground black pepper

1/2 c.

white wine

1 tbsp.

freshly chopped rosemary

2 tbsp.

freshly chopped sage leaves

1 lb.

sweet Italian sausage, removed from casings

2 c.

low-sodium chicken broth

2

large eggs, lightly beaten

3/4 c.

freshly chopped flat-leaf parsley

1/2 c.

chopped dried cranberries

3/4 c.

chopped pecans

Steps:

  • Preheat oven to 400°. Spread bread cubes on a rimmed baking sheet and bake until crisped but not golden, about 12 minutes. Let cool.   Meanwhile, in a large skillet, melt butter over medium-high heat. Add onions, celery, and apples and season with salt and pepper. Cook, stirring occasionally, until softened and start to turn golden, about 15 minutes. Add wine and simmer until almost completely reduced. Stir in rosemary and sage. Scrape mixture into a large heatproof bowl.  Return skillet to medium-high heat. Add sausage, and cook, stirring occasionally and breaking up into small pieces, until cooked through, about 8 minutes. Pour off any excess grease and then add sausage along with toasted bread, broth, eggs, parsley, cranberry, and pecans to the bowl with vegetables. Season with salt and pepper and toss until well combined.  Scrape stuffing mixture onto a large rimmed baking sheet and spread into an even layer. Bake until crispy on top and cooked through, about 30 minutes. Serve warm.

  • 1. Preheat the oven to 400?F. Spread the bread cubes on a sheet pan and toast, stirring now and then, until lightly browned and crisp, about 10 minutes. Set the bread aside to cool. You can skip this step if you use stale bread. 2. Meanwhile, put the olive oil in a large pot over medium-high heat. Crumble in the sausage and cook, stirring now and then, until all the fat is rendered and the meat is crisp and browned, about 15 minutes. 3. Add the onions, celery, garlic and 1 teaspoon salt to the pot and reduce the heat to medium. Cook the vegetables, stirring now and then, until slightly softened, about 10 minutes. 4. Add the sage and stock, and increase the heat to high. Once the mixture is at a boil, turn off the heat. Stir in the spinach, parsley and reserved bread. Taste the mixture and season with salt if more is needed. Add the eggs and give everything one good final stir. 5. Line the sheet pan you toasted the bread on with parchment paper. Transfer the stuffing to the pan and spread it into an even layer. Dot the top with the butter. Bake until the top is browned and the edges are nice and crispy, about 25 minutes. Serve hot.

HOW TO MAKE STUFFING - NYT COOKING
Melissa Clark tells you how make the best stuffing.
From cooking.nytimes.com
  • If you don’t stuff your turkey, you really don’t need to truss it. But if you do stuff your bird, trussing helps keep the stuffing in its proper place, especially when you are moving the turkey from the roasting pan to the cutting board. Here’s the simplest way to do it.Place the turkey breast side up on the rack in the roasting pan. Criss-cross the legs and use a piece of butcher’s twine to tie them together at the ends, just above the joint. Wrap the twine twice around the legs to make sure they are secure. Take a long piece to twine and loop it around the body of the bird, so that the wings are pressed against the breast. Tightly tie the twine in a knot or bow at the top of the breast. The trussed turkey is now ready to roast.
