This super simple and delicious nuo mi fan recipe has minimal prep work (no soaking!). It results in a flavorful Chinese sticky rice in either the Instant Pot or a rice cooker.

3 cups sticky rice
3 cups shiitake soaking liquid + water/chicken stock
2 tbsp dark soy sauce (or regular soy sauce)
2 tbsp soy sauce
1 tbsp sesame oil
2 tsp white pepper
1 tsp sugar
1/2 tsp salt
4 Chinese sausages (chopped)
6 shiitake mushrooms
2 tbsp dried shrimp
2 tbsp fried shallots
1 tbsp soy sauce
1 tsp sugar
Cilantro (chopped)
Green Onion (chopped)

Steps:

  • Reconstitute the shiitake mushroom in hot water. Squeeze out the excess water and dice the mushroom, reserving the mushroom soaking liquid.

Sticky Rice Instant Pot - Gives you some many choices, here we made a coconut sticky rice in a pressure cooker.

1 cup glutinous rice
1 pandan leaf (optional)
1 cup Water
3 tbsp palm sugar
1 cup Coconut Cream
? tsp salt

Steps:

  • Dissolve the palm sugar in water - we used the instant pot on saute. After it is dissolved strain it as there will be some lumps and bits as this is real raw palm sugar
  • Cook the Coconut cream - again turn the instant pot to saute and boil for 1-2 minutes and then tip out into a bowl
  • Add 1-2 tablespoons coconut cream to the water (1 cup) and mixAdd the rice and the water to the instant pot and stir well, then add a pinch of saltAdd 1 cup of the palm sugar mix and stirPut on the lid and cook for 22 minutes on high pressure and 10 minutes natural pressure release
  • After cooking taste and check the texture - you can add more of the palm sugar water mix to increase the liquid and make it a little sweeterServe into a bowl or cup and drizzle the coconut cream over the top
