- Preheat the oven to 250 ̊. Line 2 baking sheets with parchment paper. Combine the egg whites, cream of tartar, peppermint extract and salt in a large bowl. Beat with a mixer on medium speed until foamy, about 2 minutes. Increase the speed to medium high and beat until thick and opaque, about 1 more minute. Gradually add the powdered sugar, about 1/4 cup at a time, and beat until stiff shiny peaks form, 8 to 10 minutes. Using a thin pastry brush, make 5 to 6 stripes of gel food coloring inside a pastry bag fitted with a large star tip. Carefully spoon the meringue into the bag. Pipe 2-inch meringues about 1 inch apart on the prepared pans. Bake the meringues for 1 hour, then turn off the oven and leave the meringues inside for 2 more hours to cool and dry.

- In a large bowl, combine the first 7 ingredients. In a small bowl, combine the egg, milk, bananas, peanut butter, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined miniature muffin cups three-fourths full. For topping, in a small bowl, combine the brown sugar, peanuts and chocolate chips. Sprinkle over muffins. Bake at 350° for 10-13 minutes or until a toothpick inserted in the center comes out clean., Cool for 5 minutes before removing from pans to wire racks. Serve warm.
