Make these swirled peppermint meringues for your Christmas party this year. They'll go along with the rest of your Christmas cookies and Christmas desserts.

large egg whites, at room temperature

1/4 tsp.

cream of tartar

1/4 tsp.

peppermint extract

1/4 tsp.

kosher salt

1 2/3 c.

powdered sugar

Red gel food coloring

Steps:

  • Preheat the oven to 250 ̊. Line 2 baking sheets with parchment paper. Combine the egg whites, cream of tartar, peppermint extract and salt in a large bowl. Beat with a mixer on medium speed until foamy, about 2 minutes. Increase the speed to medium high and beat until thick and opaque, about 1 more minute. Gradually add the powdered sugar, about 1/4 cup at a time, and beat until stiff shiny peaks form, 8 to 10 minutes. Using a thin pastry brush, make 5 to 6 stripes of gel food coloring inside a pastry bag fitted with a large star tip. Carefully spoon the meringue into the bag. Pipe 2-inch meringues about 1 inch apart on the prepared pans. Bake the meringues for 1 hour, then turn off the oven and leave the meringues inside for 2 more hours to cool and dry.

Number Of Ingredients 18

1 cup old-fashioned oats
1 cup whole wheat flour
1/2 cup all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 large egg, room temperature
3/4 cup fat-free milk
3/4 cup mashed ripe bananas
1/2 cup creamy peanut butter
1/3 cup unsweetened applesauce
1/2 teaspoon vanilla extract
3/4 cup miniature semisweet chocolate chips
TOPPING:
1/3 cup packed brown sugar
1/3 cup dry roasted peanuts, coarsely chopped
1/3 cup miniature semisweet chocolate chips

Steps:

  • In a large bowl, combine the first 7 ingredients. In a small bowl, combine the egg, milk, bananas, peanut butter, applesauce and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips., Fill greased or paper-lined miniature muffin cups three-fourths full. For topping, in a small bowl, combine the brown sugar, peanuts and chocolate chips. Sprinkle over muffins. Bake at 350° for 10-13 minutes or until a toothpick inserted in the center comes out clean., Cool for 5 minutes before removing from pans to wire racks. Serve warm.
