This recipe calls for you to grind your own chicken breasts. If you'd prefer, pick up ground chicken at the grocery store instead.  Traditional taco recipes call for ground beef, which can feel greasy in tacos. Try this twist instead. Traditional chicken strips are replaced with ground chicken breast flavored with onion, garlic, and peppers. Once you have your chicken base, top the tacos with your favorites: radish, lime juice, and cilantro.If you crave a creamy note, add a dollop of plain yogurt. Number Of Ingredients 12

1 cup chopped onion
5 garlic cloves
2 jalapeño peppers, trimmed
1 pound skinless, boneless chicken breast halves
1 tablespoon canola oil
1/2 teaspoon salt
1/4 teaspoon black pepper
8 (6-inch) corn tortillas
1 cup sliced radish
1 cup chopped avocado
2 tablespoons fresh lime juice
Garnish: cilantro leaves

Steps:

  • Combine chopped onion, garlic cloves, and trimmed jalapeño peppers in a food processor; process until ground. Add chicken breast halves; process until finely ground. Heat a large skillet over medium-high heat. Add canola oil. Add chicken mixture; sprinkle with salt and pepper. Sauté 10 minutes, stirring to crumble. Heat tortillas according to package directions. Place 2 tortillas on each of 4 plates; divide chicken mixture evenly among tortillas. Combine sliced radish, chopped avocado, and fresh lime juice; divide mixture evenly among tacos. Garnish with cilantro leaves.

Number Of Ingredients 10

6 large poblano chiles (about 1 1/2 lb.)
2 tablespoons canola oil
1 medium white onion, cut into 1/4-in. slices
1 tablespoon minced garlic
1/3 cup Mexican crema or sour cream
3/4 teaspoon kosher salt
12 (5-in.) corn tortillas, warmed
1/2 cup sliced radishes
1 ear corn, grilled and kernels removed
1 chayote, peeled, grilled, and diced (optional)

Steps:

  • Preheat broiler to high with oven rack 6 inches from heat. Broil chiles 8 minutes or until blackened, turning frequently. Place in a bowl; cover with plastic wrap. Let stand 15 minutes. Peel, seed, and slice chiles into 1/4-inch-wide strips. Heat oil in a skillet over medium-high. Add onion; sauté 5 minutes. Add sliced chiles and garlic; sauté 2 minutes. Stir in crema and salt; cook 1 minute. Divide chile mixture among tortillas; top with radishes, corn, and chayote, if using.
