Steps:

  • For best results, thaw before cooking by placing cobia package in the refrigerator for 8–10 hours or overnight.
  • To Broil: Preheat broiler on high for 10 minutes. Position oven racks two rungs down from the top, which allows for even cooking. Brush broiling pan with olive oil so fillets do not stick. Season fillets with salt and pepper and place on the broiling pan and into the oven. Broiling the cobia should only take 5 minutes or less. Once the first side is browned, flip cobia over and cook the other side until browned. Check the internal temp of your cobia with a digital thermometer, it is ready to eat when it reaches 155 degrees F.
  • To Sauté: Season your Cobia fillet with salt and pepper to taste. Heat olive oil in a medium pan over medium-high heat. Add Cobia to pan and allow to sear for about 3 minutes. Flip over the fillet and sear the other side for about an additional minute, so a crust forms on both sides. Remove and serve with cooked vegetables for over rice.
  • To Grill: Squeeze lemon juice over your cobia fillet, let the fillet marinate in the lemon juice for about 10 minutes. Season the fillet with salt and pepper to taste. Place fillet on the grill, cook each side 6-7 minutes until the fish turns opaque. Remove from the grill and serve.

1/3 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 lb cobia or sea bass fillets, cut into 4 pieces
2 tablespoons olive oil
1/3 cup dry white wine
1/2 cup reduced-sodium chicken broth
2 tablespoons lemon juice
1 tablespoon capers, rinsed, drained
1 tablespoon chopped fresh Italian parsley

Steps:

  • In shallow dish, stir flour, salt and pepper. Coat fish pieces in flour mixture (reserve remaining flour mixture). In 12-inch nonstick skillet, heat oil over medium-high heat. Place coated fish in oil. Cook 8 to 10 minutes, turning halfway through cooking, until fish flakes easily with fork; remove from heat. Lift fish from skillet to serving platter with slotted spatula (do not discard drippings); keep warm.
  • Heat skillet (with drippings) over medium heat. Stir in 1 tablespoon reserved flour mixture; cook and stir 30 seconds. Stir in wine: cook about 30 seconds or until thickened and slightly reduced. Stir in chicken broth and lemon juice; cook and stir 1 to 2 minutes until sauce is smooth and slightly thickened. Stir in capers.
  • Serve sauce over fish; sprinkle with parsley.
