A rich buttery crust that's perfect for just about any sort of filling. It's perfect for cheesecakes. You may substitute chocolate cookie crumbs for a chocolate crust.

1?½ cups finely crumbled vanilla wafers
¼ cup white sugar
6 tablespoons butter, melted
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a medium bowl combine the cookie crumbs, sugar, butter or margarine and cinnamon; mix until well blended. Press into a 9 inch pie plate.
  • Bake in the preheated oven for 7 minutes. Cool.

whole milk

packet instant chocolate pudding

(8-oz.) container Cool Whip

1/4 c.

chocolate chips, melted

Steps:

  • Make crust: Grease a shallow pie dish with cooking spray. In a large bowl using a hand mixer, beat butter and sugar until smooth. Add flour, vanilla and salt and beat until combined. Stir in mini chocolate chips. Press about two-thirds of the mixture into greased pie dish. Refrigerate while you make the filling and topping. Make filling: In a large bowl whisk together milk and pudding mix until smooth and thickened, about 5 minutes. Fold in Cool Whip and melted chocolate until evenly combined. Pour filling into crust. Make topping: Roll extra cookie dough into small balls. Place in a pile on top of filling. Freeze pie until the filling is solid, about 4 hours. Slice and serve cold.

Press the dough into the prepared tart pan, creating an even layer in the base and up the side. Use a paring knife to remove excess dough from the edge. 5. Bake the crust until golden brown, 25 to 30 minutes. Cool completely before filling and serving. Note: To bake this crust in a 9-inch tart pan, remove 1 cup of the finished dough from the mixture before pressing the remainder into the tart pan. To make use of that extra dough, divide it into 6 pieces and bake on a parchment-lined baking sheet for 8 to 10 minutes.
