Here's an easy idea for putting an adorable summertime spin on our classic cut-out cookie recipe. Allow the cookies to cool completely before proceeding to prepare your royal icing in whatever vibrant summer colors you choose.

Yield Makes 20 to 30 cookies

Steps:

  • Preheat oven to 350°. Line a baking sheet with parchment paper.
  • Arrange 8 popsicle sticks on baking sheet at a time.
  • Lightly flour a clean surface and rolling pin. Roll cookie dough to a ½ inch thickness. Using a popsicle shape cookie cutter, cut dough into shapes.
  • Transfer each cookie cut-out to the baking sheet, placing a cookie on top of each popsicle stick, leaving 1 1/2 inches of the popsicle stick uncovered. Arrange cookies 1 inch apart. Bake until lightly golden brown around edges, 10-12 minutes. Cool on pan for 10 minutes, then transfer cookies to a wire rack to cool completely.
  • Place prepared royal icing in a piping bag or a ziplock bag with 1 corner snipped, and decorate cookies. Pipe icing onto cookie, and use a wooden pick to spread icing to edges and corners of cookie.
