Cookie Dough Marshmallow Bars | Hy-Vee image

1 (16-oz.) pkg. Crav'n Flavor sugar break n' bake cookie dough
1 (10-oz.) Hershey's Kisses strawberry ice cream cone
2 (7-oz.) jars Hy-Vee marshmallow crème
1 (6-oz.) pkg. Hy-Vee strawberry yogurt mini pretzels
0 Arcoiris marshmallow shortbread cookies
1 c. of freeze dried raspberries
0 Rainbow sprinkles

Steps:

  • 1.

    Preheat oven to 350 degrees. Line a 9-by-9-inch pan with parchment paper. 

  • 2.

    Press sugar cookie dough into prepared pan. Press strawberry kisses into dough and bake for 12 to 15 minutes. 

  • 3.

    Remove from oven and cool completely. 

  • 4.

    Spread marshmallow fluff over cooled cookie dough. Sprinkle with chopped pretzels, whole pretzels, chopped kisses, marshmallow shortbread cookies, and freeze-dried raspberries. Garnish with rainbow sprinkles, if desired. 

  • 5.

    Refrigerate for 1 hour before serving.

¾ cup brown sugar
¼ cup butter
1 egg
1 cup all-purpose flour
2 ounces white chocolate, chopped, divided
2 ounces dark chocolate, chopped, divided
1 tablespoon cocoa powder
½ teaspoon baking powder
½ cup miniature marshmallows

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Combine brown sugar and butter in a bowl; beat until creamy. Beat in egg. Mix in flour, 1/2 of the chopped chocolate, cocoa powder, and baking powder until dough comes together.
  • Drop spoonfuls of the dough onto a cookie sheet, allowing enough room for the cookies to spread. Flatten slightly.
  • Bake in the preheated oven until edges are done but tops are a bit gooey, about 5 minutes.
  • Remove from the oven. Push remaining chocolate and mini marshmallows into the tops. Continue baking until tops are set, about 5 minutes more. Be careful to remove cookies before marshmallows burn.

  • Butter an 8-by-8-inch baking pan. Line with parchment paper, leaving a 1-inch overhang on two sides; generously butter parchment. Liberally dust pan with 1/3 cup powdered sugar, making sure sides and corners are coated as well. To prepare cookie dough, combine butter and sugars in a large bowl or the bowl of a stand mixer. Mix until light and fluffy, 2 to 3 minutes. Add salt, vanilla, and milk; mix well. Add flour and mix until incorporated. Set aside at room temperature until ready to use.Place 1/3 cup cold water in the bowl of a stand mixer or a large mixing bowl. Sprinkle gelatin over top and set aside to soften for at least 5 minutes.Meanwhile, combine sugar, brown sugar, corn syrup, and salt in a medium saucepan. Bring to a boil over medium-high heat, stirring until sugar is dissolved. When mixture begins to boil, stop stirring. Cover and allow to boil for 2 minutes. Remove cover and continue to boil, without stirring, until mixture reaches 238°F, about 7 to 8 minutes. Remove from heat.Fit stand mixer with a whisk attachment and turn to low speed. Carefully pour hot (very hot!) sugar mixture into bowl with gelatin. Pour slowly down the side of the bowl to prevent splattering. Increase the mixer speed to medium-high and whip until mixture is thick, shiny, and lukewarm to the touch, about 13 to 15 minutes. Beat in vanilla.Drop dollops of soft cookie dough onto marshmallow mixture, and fold until dough is swirled evenly throughout, but not fully incorporated.Pour marshmallow into prepared pan, smoothing top with a lightly buttered spatula. You may also use your hands if you find it easier; simply wet them with water and press the marshmallow into the pan. It is sticky stuff; don’t worry if you can’t get it all out of the bowl. Lightly dust top with remaining powdered sugar and sprinkle with chocolate chips. Allow marshmallows to set, uncovered, for 3 1/2 to 4 hours or until firm. To serve, lift marshmallows out of pan and onto a cutting board. Carefully peel down sides of parchment. Cut into bite-size cubes using a pizza cutter that has been lightly buttered and dusted with powdered sugar so it won’t stick. Serve immediately or store in an airtight container for up to 1 week.
