This recipe makes tasty and incredibly simple to make chicken and dumlings with a velvety sauce. It's so good, you will want to make them often!

2 c. flour
½ t. baking powder
1/4 t. salt, divided
6 T. butter
1 cup milk, (a little less)
2 qt. chicken stock
1 T. onion powder
2 T. ground black pepper
2 bay leaves
garlic powder, to taste
poultry seasoning, to taste
3 c. cooked chicken, rotisserie is good

Steps:

  • Combine flour, baking powder and 1/8 t. salt in a bowl. Cut butter into the dry ingredients with a fork or pastry blender. Stir in milk, mixing with a fork until the dough forms a ball. Heavily flour a work surface.Use rolling pin or a pizza cutter to cut the dumplings. Use a small spatula to lift the dumplings off the cutting surface. Roll dough out thin with a heavily floured rolling pin. Dip cutter in flour and cut the dumplings in squares about 2 inches x 2 inches. Use a floured spatula to put dumplings on a heavily floured plate. Just keep flouring between the layers of dumplings. To cook, bring stock to a boil. Add in seasonings plus the remaining salt. Drop dumplings in one at a time, stirring as you add them. The extra flour on them will help thicken the stock. Cook for about 15-20 minutes or until they not doughy tasting. Add the cooked chicken to the pot. Serve 8.

Try this old fashioned chicken and dumplings recipe. Learn to cook dumplings from scratch with this easy-to-follow chicken recipe.

2-1/2 to 3 pounds whole chicken
2 cups chicken broth
2 cups all purpose flour
1/2 teaspoon salt
6 tablespoons butter
1 large egg
1/2 cup whole milk
water

Steps:

  • Place the chicken into a large boiling pot. Add chicken broth and water. Make sure the chicken is covered with water. Bring to a boil and reduce heat to a simmer. Throughout cooking skim away any foam that forms in your pot. Simmer for 1-1/2 hours until chicken is done and tender. Remove chicken from the broth and allow to cool.
  • Debone the chicken once it is cool enough to handle. While deboning the chicken discard the undesirable parts (skin, bones, etc). Cut deboned chicken into bite-sized pieces.
  • Now it's time to prepare your dumplings. Preparing the dumplings is easy. Mix your flour, salt, egg, butter, and milk in a stand mixer. If you don't have a stand mixer, a mixing bowl and hand mixer will do the job. Continue to mix to form balls.
  • Form your dumplings by rolling out the dough to about 1/8 inch on a cutting board. Use a sharp knife or pizza cutter to cut your dough into bite-size pieces. If you feel creative try cutting out small circles, squares or diamond patterns.
  • Bring the chicken broth to a boil. Drop dumplings into boiling broth, ensuring that they submerge. Add all of your dumplings to the broth. You can keep dumplings from sticking together by adding butter and dunk dumplings one final time. Reduce heat to medium-low and cook for 8 to 10 minutes. Add chicken and simmer until chicken is heated. Your dumplings are now ready to serve.

    2. Put your flour into a mixing bowl. Using a coarse grater, grate your cold butter into the flour. Add a pinch of sea salt and black pepper.
    3. Using your fingers, gently rub the butter into the flour until it begins to resemble breadcrumbs. Add a splash of cold water to help bind it into a dough.
    4. Divide the dough into 24 pieces and gently roll each into a round dumpling. The dumplings will suck up quite a bit of moisture so if your stew looks dry, add a cup of boiling water and give it a good stir.
    5. Place the dumplings on top of your fully cooked stew and press down lightly so that they’re half submerged. Cook in the oven or on the hob over a medium heat with the lid on for 30 minutes.

    1. For this recipe, you will need 1 leftover chicken carcass, plus up to 300g leftover cooked chicken. Strip all the meat you can find off the chicken carcass, and put aside.
    2. Place the carcass and any bones in a large pan and use a rolling pin to smash them all up. Cover with 1 litre of water, bring to the boil, then simmer for at least 30 minutes, skimming away any scum from the surface.
    3. Meanwhile, finely slice the bacon and place in a large casserole pan on a medium heat with a lug of oil, while you peel and chop the onions, carrots, and potatoes or celeriac into 2cm dice.
    4. Add to the pan along with the thyme sprigs and bay leaves. Cook for 10 minutes, stirring regularly.
    5. Halve and stir in the mushrooms, along with the leftover chicken and plain flour.
    6. Pour the stock through a sieve straight into the pan (topping up with a little water, if needed) and let it simmer for 20 minutes, or until thick and delicious, while you start your dumplings.
    7. Place the self-raising flour and a pinch of sea salt in a mixing bowl. Coarsely grate in the butter and rub together until it resembles breadcrumbs.
    8. Add 100ml of cold water and bring into a ball of dough. Divide into 12 pieces and roll into balls.
    9. When the time’s up, loosen the stew with a good splash of water if needed, season to perfection, then transfer it to an ovenproof pan and place the balls on top.
    10. Pop the lid on and bake at 190°C/375°F/gas 5 for 30 minutes, or until hot through and the dumplings are fluffy and cooked. Serve with some seasonal greens.
