200g dried borlotti or cannellini beans , soaked for 6-8 hours
2 onions , cut into 1cm chunks
2 medium carrots , cut into 1cm chunks
3 celery stalks, cut into 1cm chunks
2 tbsp extra virgin olive oil , plus extra to serve (optional)
4 garlic cloves , crushed
1 litre fresh vegetable stock
400g can plum tomatoes
2 tbsp brown rice miso
6 rosemary sprigs
4 bay leaves
150g ditaloni rigati or other small pasta shapes
200g cavolo nero , stalks finely chopped and leaves torn
30g vegan parmesan , grated, to serve (optional)

Steps:

  • Drain the beans and bring to the boil in a pan of salted water. Cook for 10 mins, drain, rinse and put in a slow cooker with the onions, carrots and celery.
  • Stir in the olive oil, garlic, stock, tomatoes, half a can of water and the miso. Tie the herbs together with kitchen string and add these as well. Season. Cover and cook on low for 6-8 hrs, until the beans are cooked through and all of the veg is really tender.
  • Remove and discard the herbs and stir in the pasta. Cover and cook on high for another 30 mins. Add the cavolo nero stalks and leaves and cook for a final 30-40 mins, or until the pasta is cooked through and the greens are tender. Serve scattered with the cheese and drizzled with a little more olive oil, if you like.

This quick, easy recipe for puréed spinach, golden cubes of paneer and plenty of spices will become a veggie dinner staple. Each serving provides 295 kcal, 27g protein, 12g carbohydrates (of which 7g sugars), 15g fat (of which 8g saturates), 5g fibre and 1.8g salt.

500g/1lb 2oz spinach
500ml/18fl oz boiling water
3 tsp cornmeal or fine polenta
4 tsp ghee or 6 tsp sunflower or rapeseed oil
400g/14oz paneer, cut into chunks
1 tsp cumin seeds
20g/¾oz fresh root ginger, peeled and grated
20g/¾oz garlic, finely chopped
125g/4½oz onion, finely chopped
2–3 small green chillies, seeds in (bird’s eye or similar), chopped
1 tsp ground turmeric
2 tsp garam masala
1 tsp salt

Steps:

  • Tip the spinach into a saucepan and pour over the water. Bring to the boil and cook for 4–5 minutes until tender. Drain, reserving 50ml/2fl oz of the cooking water. Transfer the cooked spinach to a bowl.
  • Add the cornmeal to the cooked spinach, along with the reserved water. Blend to a smooth purée with a stick blender. Set aside.
  • Heat 2 teaspoons of the ghee or oil in pan over a medium heat, then fry the paneer chunks until evenly browned on all sides. Transfer to a plate and set aside.
  • In the same pan, heat the remaining ghee or oil, then add the cumin seeds. As soon as they begin to sizzle, add the ginger and garlic and cook for 1 minute. Add the onion and chillies and cook for another 7–8 minutes on a medium heat until the onions are softened.
  • Stir in the turmeric, garam masala and salt and cook for 1 minute more. Stir in the puréed spinach, lower the heat and cover the pan. Cook for another 4 minutes, then add the cooked paneer and cook for a further 2 minutes.
  • Serve hot with a flatbread or plain rice.

  • Ingredients out • Kettle boiled • Large casserole pan, high heat • Small frying pan, high heat • Large lidded pan, high heat • Food processor (thick slicer) START COOKING Squeeze the sausage meat out of the skins into the casserole pan with the fennel seeds and rosemary leaves (discard the sausage skins). Break the meat apart, stirring regularly. Finely slice the bacon, put into the small frying pan with 1 teaspoon of olive oil and the hazelnuts and cook until golden, then add the maple syrup or honey and remove from the heat. Line the beans up and cut off the stalks, then put them into the large pan, cover with boiling salted water and the lid. Cook for 4 minutes, then add the greens, tearing up any larger leaves. Pour the wine into the sausage pan and let it bubble away while you check on the beans and greens. If done, use a slotted spoon to transfer them to a colander to drain, leaving the pan of water on the heat. Tear the broccoli tips into the sausage pan, then slice and add the stalks, along with the passata. Add the gnocchi to the pan of water the greens were cooked in and pop the lid on. Mix the extra virgin olive oil, vinegar and a pinch of sea salt and black pepper in a serving bowl, tip in the drained greens and toss to coat, then scatter over the crispy nuts and bacon. When the gnocchi have been floating for a couple of minutes, drain them and toss with the sauce. Season to taste and serve in the pan, or on a nice platter, drizzled with yoghurt.

    1. Cook the pasta in a pan of boiling salted water according to the packet instructions.
    2. Meanwhile, peel the garlic. Tear the stems out of the cavolo and discard, adding the leaves and the garlic to the pasta pan for 5 minutes.
    3. Pour 1½ tablespoons of extra virgin olive oil into a blender, then finely grate in the Parmesan.
    4. Use tongs to carefully transfer the cavolo leaves and garlic straight into the blender and blitz for a few minutes until super-smooth. Taste and season to perfection with sea salt and black pepper.
    5. Drain the pasta, reserving a mugful of cooking water.
