Easy French Onion Soup Recipe - Food.com image

This soup is simple to make after work. My husband thinks it is as good if not better than any we've ever had in a restaurant.

Prep Time 10 minutes

Number Of Ingredients 8

2 (14 ounce) cans beef broth
1 (10 1/2 ounce) can beef consomme
2 large onions, sliced 1/4-inch thick
2 tablespoons butter
2 pressed garlic cloves
1 dash Worcestershire sauce
1 cup shredded swiss cheese
4 slices toasted French bread

Steps:

  • Place onions and butter in saucepan.
  • Sauté on medium heat until onions are tender.
  • Add garlic and sauté 1-2 minutes (don't let garlic burn).
  • Add beef broth, consomme, and Woschershire sauce.
  • Bring to a boil for 1 minute.
  • Take ovenproof bowls (I use over-sized coffee mugs) and place 0.125 cup of cheese in bottom of each bowl.
  • Fill bowl with soup leaving room at the top.
  • Place toasted French bread on top.
  • Top with 0.125 cup Swiss cheese.
  • Place under broiler until cheese is bubbly.
  • Serve immediately.
  • Caution--bowls will be hot!

15ml (1 tbsp) vegetable oil
2 garlic cloves, peeled and finely chopped
2.5cm (1in) ginger, peeled and finely chopped
15ml (1 tbsp) light soy sauce
2 cobs (300g/10oz) sweetcorn kernels
1.5ℓ (6 cups) chicken stock
45ml (3 tbsp) cornflour
2 cooked chicken breasts, shredded
2 eggs, whisked
15ml (1 tbsp) sesame oil
2 spring onions, washed and finely sliced

Steps:

  • Fry the garlic and ginger in the oil for 1 minute in a large saucepan.
  • Add the sweetcorn and soy sauce then fry for 3 minutes.
  • Pour in the stock and let the soup bubble.
  • Create a slurry with the cornflour by adding a bit of water with the flour in a cup.
  • Slowly add the slurry in a thin drizzle to the soup while stirring. The soup should thicken after a short while.
  • Stir in the chicken.
  • Just like you did with the slurry, add the whisked eggs to the soup while stirring.
  • Finish off with a splash of sesame oil and after dividing the soup between bowls, sprinkle with spring onion. Serve immediately.

Turn the heat down and simmer slowly for an hour and a quarter, skimming the white residue off the top every now and again. Add your rosemary sprigs, shitake mushrooms and sherry (if you are using it) for the last 10 minutes, then remove the chicken from the pan. It should be perfectly cooked, and will be great for salads or sandwiches or for tearing into slivers to put into the soup. Season the soup with salt and ladle it through a sieve into bowls, trying not to disrupt it too much as you want to keep it reasonably clear. Add the chicken slivers and a few mushrooms to each bowl and drizzle with a little extra virgin olive oil. The finished thing should be a kinda clear consommé.
