Great party-fare appetizers, these bite-sized appetizers of tortillas are layered with a flavorful cheese mixture.

1/2 cup sour cream
1 (8-ounce) package cream cheese, softened
1 (2-ounce) jar diced pimientos, drained
2 tablespoons sliced green onions
2 tablespoons chopped mild green chiles, drained
2 tablespoons chopped ripe olives, drained
10 (8-inch) flour tortillas
12 (3/4-ounce) slices Land O Lakes® Deli American halved
Paprika or chili powder
Jalapeño pepper rings, if desired
Sweet red drop peppers, if desired

Steps:

  • Combine sour cream and cream cheese in bowl. Beat at medium speed, scraping bowl often, until smooth. Stir in pimientos, green onions, chiles and olives.
  • Place 2 tortillas aside.
  • Spread 8 tortillas with 1/4 cup sour cream mixture each. Place 6 cheese halves onto 1 tortilla; layer with 2 tortillas, spread-side up, 6 cheese halves and 1 tortilla, spread-side up. Place 1 tortilla without spread over top. Repeat with remaining tortillas and cheese. Wrap each tortilla stack in plastic food wrap; refrigerate at least 2 hours or overnight.
  • Cut tortilla stacks into 1-inch squares; sprinkle tops with paprika. Garnish with jalapeño pepper rings and drop peppers, if desired. Serve with toothpicks.

Confetti Eggs (Cascarones) Recipe - Mexican.Food.com image

A Mexican/American Tradition around Easter and carnival. These pretty confetti eggs really make any party fun for kids and adults alike! You will need a large bowl for catching the raw eggs; you can save these and use them for cooking, and a clean, sharp knife. Prep time depends on your technique.

1 dozen egg
tissue paper
food coloring
egg, dyes paints
white glue or glitter glue
glitter, confetti
shredded paper

Steps:

  • Over the bowl, use the knife to cut a small to medium sized hole in the tip of the egg.
  • Turn the egg over and make a small hole in the opposite side.
  • Shake egg over the bowl, or blow through the small hole until all of the raw egg yolk and white has emptied out into the bowl.
  • Repeat with all eggs.
  • It is okay if the eggs crack or chip a little but try to keep them mostly intact.
  • Once all eggs have been emptied, rinse with water. Be sure they are clean without any remaining egg white or yolk.
  • Decorate the shells with paint, egg dye recipe #160383, glitter, etc. The more colorful and outrageous, the better!
  • Once eggs are dry, cut small squares of tissue paper and glue them over the small holes to seal them.
  • Using a funnel, or small spoon, fill the eggs with confetti or shredded paper through the larger hole.
  • Once an egg is full, pack a small tissue paper "puff" to plug the larger hole and seal it with glue.
  • Allow cascarones to dry and store in the egg carton to protect them.
  • Have fun hunting for and throwing cascarones, or sneaking up behind someone and cracking the cascarone over their head!

Mexican Traditon! These beautiful little eggs are for celebrating. They are empty egg shells with confetti in them. They are to be cracked over someone's head or otherwise and the colorful confetti is revealed by falling out of the egg. They are much fun at festivities such as Easter, birthday parties, or just a day of celebration. For a short time, I lived with a lady named Lupita in San Antonio, Texas. She was my good friend Mona's mother. In the six months or so that I lived there I was steeped in some Mexican traditions and this was one of them. The whole family was brought in to help make these and you stayed up till 3 or 4 in the morning making them. It was the same when Lupita made Tamales. lol When I make some with my nephews I will take my own pics. These pics are from the internet, so you could get an idea of what they look like. I posted a pic of Lupita, Mona and me that I finally found in a box of pictures from Texas. I hope you enjoy and share too if you make these with your family.
