This is a family favorite. I found this recipe originally entitled "Laura Bush's Colorado Cowboy Cookies" in a newspaper publication about 15 years ago. Over the years It has changed a bit here and there but this is the original recipe so you can add or subtract nuts, different types of candy chips, raisins, craisins etc. Makes about 4 dozen large cookies that make fabulous Ice Cream Cookie sandwiches. These mail well for "care packages" to students and military. For a softer chewier cookie omit one cup of white sugar and add 1 cup of brown sugar.

3 cup(s) flour
1 tablespoon(s) baking powder
1 tablespoon(s) baking soda
1 tablespoon(s) cinnamon
1 teaspoon(s) salt
1 1/2 cup(s) (3 cubes) real butter - room temp
1 1/2 cup(s) sugar
1 1/2 cup(s) light brown sugar
3 eggs
1 tablespoon(s) vanilla
3 cup(s) chocolate chips
3 cup(s) old fashioned oats
2 cup(s) unsweetened flaked coconut (i omit this item)
2 cup(s) chopped pecans

Steps:

  • Heat oven to 350F
  • Mix flour, baking powder, baking soda, cinnamon and salt in bowl.
  • Beat butter with an electric mixer at medium speed until smooth and creamy. Gradually beat in sugars and combine thoroughly. ( I use my kitchen aid mixer).
  • Add eggs one at a time, beating after each. Beat in vanilla.
  • Stir in flour mixture until just combined. Stir in chocolate chips, oats, and pecans. (If you want to add the coconut, add it now.)
  • For each cookie drop an ice cream scoop of dough and slightly flatten it, spacing it about 3” apart.
  • Bake for 15 to 17 minutes till edges are lightly browned. Cool on pan for one minute then remove from pan to cool on racks or I use a few sheets of newspaper to lay them on until cool.
  • When cool store in plastic zip locks or I sometimes put them in shoe boxes lined with wax paper and put them in the freezer.

2 c. all-purpose flour
2 c. old-fashioned oats
1 tsp baking soda
1/2 tsp baking pwdr
1/2 tsp salt
1 c. unsalted butter - (2 sticks) room temperature
3/4 c. sugar
3/4 c. dark brown sugar - (packed) plus
2 Tbsp. dark brown sugar
2 lrg Large eggs
1 tsp vanilla extract
1 1/2 c. semisweet chocolate chips
1 c. minced toasted walnuts - (abt 4 ounce)

Steps:

  • Whisk first 5 ingredients in medium bowl to blend. Using electric mixer, beat butter and both sugars in large bowl till light and fluffy. Add in Large eggs and vanilla, beating to combine. Add in dry ingredients and beat till just blended. Stir in chocolate chips and walnuts. Cover dough and refrigerate1 hour. (Can be made 1 day ahead. Keep chilled. Let soften slightly before continuing.) Arrange 2 racks in center of oven; preheat to 350 degrees. Butter 2 baking sheets. Form dough into balls, using 1/4 c. dough for each. Place on prepared sheets, spacing 2 inches apart. Flatten with hand to 3 1/2-inch rounds. Bake 10 min, then rotate sheets. Bake till cookies are golden around edges and hard in center, about 4 min longer. Cold on sheet 5 min. Transfer to racks to cold completely. (Can be made 1 week ahead. Store airtight at room temperature.) This recipe yields about 20 cookies.
